How to choose fresh and delicious beef

  • To choose good beef, you should observe the color of the meat piece. Fresh, good meat usually has a bright red color, not dark red, and the beef fat is light yellow.
  • You should choose small and tender pieces of meat, with fine fibers and good elasticity when pressed.
  • If you see small, white cysts on the meat that are easily removed, it could be a sign of parasites. You should also avoid small pieces of meat that have been pre-cut, as they often contain parasites.
  • If you buy pre-processed and packaged meat, remember to check the expiration date.

How to prepare Tomato Beef Soup

  • Prepare the beef

    Wash the beef you bought with diluted salt water, then rinse gently with water and let it drain. Use paper towels or a clean cloth to dry the remaining water on the piece of beef.

    Cut the beef into pieces about 1/2 finger thick.

    How to prepare tender beef, not chewy

    • Beef does not have a strong fishy smell like other meats. If possible, just put the beef in the refrigerator for 20 – 30 minutes, which helps the meat firm up and easier to cut.
    • Additionally, you can marinate the beef with a bit of cooking oil; this will make the beef more tender and not chewy.
    • A very important note is to avoid over-preparing or washing the beef too thoroughly, as this will cause some nutrients in the beef to dissolve in water and be lost during cooking.

    Wash the scallions and coriander thoroughly, then chop finely. Wash the cilantro and chop it small.

    Wash the tomatoes, then cut them into wedges and remove the seeds.

    Tip: If possible, you should remove the tomato seeds to avoid the soup being gritty and to enhance its flavor.

  • Chop the beef

    After preparing and slicing the beef, proceed to chop it finely.

    Tip

    • You can also buy pre-chopped meat, but doing it yourself is safer.
    • You can put the meat in a meat grinder to grind instead of chopping to save time.
    • While grinding, you can add a little seasoning to make the meat more delicious and flavorful.

    Add the chopped beef into a bowl, then add 1/2 of the chopped green onions, chopped cilantro, 1/3 of the prepared chopped shallots, 1/3 teaspoon of ground pepper, 1/2 teaspoon of salt, 1/3 teaspoon of monosodium glutamate, and 1/2 teaspoon of sugar. Mix well and marinate the meat for about 20 – 30 minutes to allow the meat to absorb the seasoning.

  • Making beef balls

    Put on gloves, use your hands to roll the prepared minced beef into bite-sized balls.

    Note

    • Press firmly to ensure the beef balls do not fall apart when cooking.
    • You can also apply a little cooking oil to prevent the meat from sticking and to make it softer and tastier!

  • Sautéing tomatoes

    Place a pan on the stove, add a little cooking oil. When the oil is hot, add minced onion and garlic and sauté until fragrant.

    After the onion and garlic are aromatic, add the tomatoes and stir well. Season the pan with 1/3 teaspoon of sugar and 1/3 teaspoon of salt.

    Stir until the tomatoes are just cooked and have a nice color. Turn off the heat and remove the tomatoes from the pan.

  • Cooking Tomato Soup with Beef

    Place a pot on the stove, add 2 liters of water, and bring to a boil. Once the water is boiling, gradually drop in each beef ball to cook.

    Next, add the tomatoes and stir well. Cook until the water comes to a boil again. Once the water is boiling, season the pot with 1 tablespoon of fish sauce, 1 teaspoon of MSG, and 1/2 teaspoon of salt. Stir well and adjust the seasoning to suit your family’s taste!

    Finally, turn off the heat and add all the chopped green onions, cilantro, and Vietnamese coriander into the pot, stir well, and ladle into bowls.

    Note

    • Since the tomatoes are sautéed until cooked, when making the soup, you should add the beef first, and then the tomatoes to prevent the tomatoes from becoming too mushy.
    • Make sure to let the water boil before adding the beef balls to keep the broth clear and not cloudy!

  • Fresh and delicious mushrooms have a bean-shaped appearance, are still fresh; the caps are firm, white, and shiny; the stems are not slimy or slightly brown, and are not crushed; the mushroom base should not be separated or crumbly.
  • Choose mushrooms with packaging that clearly shows the origin and expiration date. Additionally, you can check the product’s barcode to know the origin, such as South Korea (barcode 880), China (barcode from 690 to 695),…
  • Prioritize choosing the newest production date printed on the packaging.

    When the tomatoes are cooked, add 2 liters of water, wait for the water to boil, then add mushrooms, when the water boils again, add green onions, season to taste, then turn off the heat.
