Ingredients for Fried basa fish fillet with passion fruit sauce Serves 2
Basa fish 180 gr Passion fruit 4 pieces White sugar 70 gr Salt 1/4 teaspoon Unsalted butter 5 gr Salt 1/2 teaspoon Pepper 1/2 teaspoon Flour 50 gr Cooking oil 20 ml Corn starch 1 teaspoon
How to choose fresh passion fruit
- You should buy passion fruits with a dark purple or reddish-brown outer skin; the darker the skin, the sweeter and more fragrant the fruit.
- Good passion fruits will have wrinkled skin, feel light when held, and have a distinctive aroma when smelled.
- Fruits with smooth, taut skin that feel heavy when held are unripe and sour; if you like to eat shrimp in passion fruit sauce with a sour dressing, you can choose this type.
- Avoid buying fruits that have wrinkled skin but are leaking juice or overly soft, as these are old and spoiled fruits.
How to make fried basa fish fillet with passion fruit sauce
-
Preparing ingredients
Cut the passion fruit in half, then use a spoon to scrape the pulp into a sieve to extract the passion fruit juice.
Add about half a cup (or 80 – 100ml) of warm water to the leftover pulp in the sieve and continue to strain to get about 150ml of passion fruit juice. Then take about 1 teaspoon of seeds and add them to the juice.
Wash the basa fish fillet thoroughly, let it drain, and then cut it into bite-sized pieces. Marinate the fish with 1/2 teaspoon of salt and 1/2 teaspoon of pepper, allowing it to absorb the seasoning on both sides for 10 minutes.
-
Make passion fruit sauce
Place a pan on the stove, add lemon juice along with 70g of white sugar and 1/4 teaspoon of salt. Stir well and cook over medium heat.
Mix 1 teaspoon of cornstarch with 20ml of water, when the lemon mixture in the pan boils, slowly add the diluted cornstarch and stir well, while adding about 5g of unsalted butter, let it sit for about 30 – 40 seconds then turn off the heat.
-
Fry the fish
Place the flour on a plate, then roll the fish in it to coat with a thin layer of flour.
Heat a pan with about 20ml of cooking oil, place the fish in with the skin side down, sear until the skin is golden and crispy, then flip and sear the other side until cooked.
Note: Fry the skin side first because the basa fish skin is thicker, so it takes longer to cook. While searing, use a spatula to press down on the fish to prevent it from curling while frying.
-
Finished Product
Drizzle passion fruit sauce over the fish and garnish. The dish is enticing with a golden, crispy basa fillet, sweet and sour sauce, served with white rice, what could be better!
How to Choose Fresh and Delicious Basa Fish
- Fresh and delicious basa fish is best when it’s still alive, so if possible, choose fish in this condition.
- If the fish has been cleaned and cut into pieces, pay attention to observe the fish skin to see if it is still fresh, the flesh should be firm and not mushy, and the eyes of the fish should be clear and bulging.
- When selecting fish, check the gills; if the gills are still red, the fish is fresh, but if they are pale or dark, the fish is spoiled.
