Egg 1 piece Beef 200 gr White tofu 200 gr Garlic 3 cloves Small ginger 1 piece Green onion 2 stalks Wheat flour 30 gr Seasoning 10 gr (sugar/salt/pepper/soy sauce/sesame oil)

How to choose good white tofu

  • Color: Good tofu will always have an off-white color. In contrast, tofu with gypsum tends to be yellower; the yellower it is, the more gypsum it contains. Therefore, you should avoid buying pieces of tofu that are yellow or turning yellow.
  • Touch: If the tofu feels soft to the touch and is lightweight, it is advisable to buy. Heavy, firm, slightly hard, and square pieces should not be purchased.
  • Smell: Pure tofu will have a fragrant smell, while tofu containing gypsum will have a lime smell or no smell at all.
  • Taste: Good tofu will have the distinctive creamy flavor of soybeans, while tofu with high gypsum content will taste bitter.

How to make Fried Beef and Tofu Cake

  • Prepare the ingredients

    Finely chop garlic, ginger, and green onions.

    Wash the beef with diluted salt water to reduce the smell, then cut it into small pieces and chop finely.

    Add the beef to the tofu, season with 1 tablespoon of sugar, 2 tablespoons of soy sauce, 1/2 tablespoon of sesame oil, 1 teaspoon of salt, 1/3 teaspoon of pepper, the chopped green onions, ginger, garlic, 30g of flour, and an egg.

    Mix the ingredients well and marinate for 5 minutes.

    Place a pan on the stove with cooking oil, when the oil is hot, add the patties and fry over medium heat, until golden, then increase the heat and fry until they are evenly golden and crispy, then remove to oil-absorbing paper.

Ground beef 350 gr Potatoes 2 tubers Onion 100 gr Fried onion 3 tablespoons Cilantro 2 tablespoons Chopped green onion 1 tablespoon Breadcrumbs 2 tablespoons Seasoning 10 gr (MSG/curry powder/dry seasoning/seasoning granules)

How to Choose Good Potatoes

  • You should choose potatoes that are yellow in color as they are tastier and more nutritious than those that are white.
  • Avoid selecting potatoes that have sprouted or have green skin, as these contain harmful substances for health.
  • Good potatoes are those that feel firm to the touch, have smooth skin, and are not bruised or have strange spots.
  • Do not buy potatoes with dents or deep scratches, as these will spoil quickly if not used in time.

How to Prepare Beef and Potato Patties

  • Prepare the Ingredients

    Peel the potatoes, cut them into small pieces, and steam them for about 15 – 20 minutes, then mash them smoothly.

    How to peel potatoes without browning and tips to whiten browned potatoes:

    • After peeling and cutting into bite-sized pieces, soak the potatoes in a basin of water mixed with 2 – 3 tablespoons of vinegar (or lemon). Let the potatoes submerge in water for a few minutes, then remove, rinse with water, and use.
    • Soaking peeled potatoes in water also helps prevent discoloration, and use the potatoes immediately to avoid them becoming bland.
    • If the potatoes turn brown, you can peel off the browned layer and soak them in water; the potatoes will become white and usable again. Another method is to place the potatoes in a pot, cover them with milk, and heat for a few minutes; your potatoes will turn white again.

    Chop the onion finely. Add 2 teaspoons of cooking oil to the pan, when the oil is hot, add the chopped onion, season with 1 teaspoon of sugar, 1 teaspoon of pepper, 1/2 teaspoon of monosodium glutamate, and 1/2 teaspoon of seasoning powder, stir-fry until the onion is translucent and the seasonings dissolve, then turn off the heat and let it cool.

  • Marinate the meatball

    After mashing the potatoes, mix them with minced beef, chopped cilantro, chopped green onions, 1/2 teaspoon of curry powder, 2 tablespoons of breadcrumbs, and 1 tablespoon of fried onions.

    Mix the ingredients well, then refrigerate for 15 minutes to make the filling sticky and easier to shape.

    Take an appropriate amount of filling, roll it into a ball, then gently flatten it to shape. After that, roll the beef meatball in dry breading for frying.

    Heat a deep pan with oil, when the oil is hot enough, add the fish cake and fry until golden brown over medium heat. Then remove and place on paper towels to absorb the oil, and arrange for decoration.

    To make the dipping sauce, mix together 1/2 tablespoon of chili sauce, 1 tablespoon of yellow mustard, and 2 tablespoons of mayonnaise.
