Mixing and fermenting the dough
With 1/2 a carrot, peel, wash, and chop it finely. Similarly, wash and chop 7 sprigs of cilantro.
Next, add the carrot and cilantro to a blender and blend them finely with 2 tablespoons of water.
Add 50g of flour type 13 to a bowl along with 1 tablespoon of the finely blended carrot mixture, 1/3 teaspoon of salt, 1 tablespoon of condensed milk, 1 tablespoon of toasted sesame seeds, and 1/4 teaspoon of baking powder. Mix all the ingredients well.
If the dough is too dry, add a little more blended carrot; if the dough is too wet, add more flour! When the dough sticks together into a mass, knead it with your hands until it’s smooth and no longer sticky.
Once the dough is ready, cover it tightly with plastic wrap and let it ferment for 15 minutes.
