Beef tongue 500 gr Pineapple 1/2 fruit Onion 1 bulb Celery 5 stalks Shallots 3 bulbs Garlic 5 cloves Bird’s eye chili 2 fruits Satay 1 teaspoon Cooking oil 5 teaspoons Common spices a little (Seasoning/ Salt/ Sugar/ MSG/ Ground pepper)

How to choose fresh and delicious pineapple

  • Fresh and delicious pineapples will have a bright yellow color, these are ripe fruits. Avoid choosing fruits with a dark brown color as this is a sign that they are overripe and about to spoil.

  • Additionally, for the shape, choose fruits that are slightly round and short. Especially, fruits with larger eyes are better, as the flesh will be more abundant than other fruits.

  • Moreover, limit choosing fruits that are overly ripe as they will spoil quickly and may ferment, which can be checked by smell. Do not choose fruits with a strong smell, but only those with a sweet, moderate aroma.

  • Prepare the beef tongue

    Wash the beef tongue with a mixture of juice from 1 lemon and a little diluted salt. Then, place a pot on the stove with 500ml of water over high heat.

    Once the water boils, add 500g of pork tongue and blanch for 5 – 7 minutes, then remove and let it cool, then continue to rub salt on the surface of the tongue for 3 – 5 minutes, then rinse with clean water and drain. Finally, use a knife to cut into bite-sized pieces.

    • Method 1: The most common way is to soak the onion in water for 5 – 7 minutes before preparing it; however, the flavor will be slightly diminished.
    • Method 2: Additionally, cut a slice of potato and rub it on the knife surface before cutting the onion.
    • Method 3: Furthermore, cut onions in well-ventilated areas like near a window or outside so the onion smell can be blown away and not irritate your eyes.

  • Prepare and marinate the beef tongue

    The beef tongue should be rubbed with salt for 5 – 7 minutes, then use a knife to scrape off the slime, then rinse it with clean water 1 – 2 times and let it drain, cutting it into bite-sized slices.

    Next, place the beef tongue in a bowl and marinate with half of the minced ginger and garlic and 1 tablespoon of seasoning, mixing well to absorb the spices for 5 – 10 minutes.

  • Method 1: The most common way is to wash it with white alcohol, then rub salt all over the tongue and blanch for 5 minutes.
  • Method 2: Smash lemongrass and boil it briefly with the tongue for just 5 minutes to remove the smell.
  • Method 3: Briefly boil the beef tongue with ginger and green onion for 5 minutes, then scrape off the outer membrane, which is also very effective.
  • Method 4: Additionally, another common method is to boil the tongue for 5 minutes and then soak it in vinegar for another minute.
