How to choose fresh ingredients
How to choose good scallions
To choose good scallions for pickling, you can select either cinnamon scallions or buffalo scallions that have moderately small stems for better flavor and seasoning absorption.
You should choose scallions that are bright white, not bruised, wilted, or damaged.
How to choose fresh and delicious cucumbers
You should choose cucumbers that are long, uniform in shape, and feel firm in your hand. Avoid selecting those that are too large or too small as they may be bitter.
It is best to choose cucumbers that have an even green color, intact skin, and no black spots or yellowing. Do not choose cucumbers that are light yellow or very dark green as these are often spoiled or due to pesticide spraying.
How to choose fresh carrots
Choose carrots that are deep orange in color, of moderate size, with smooth skin, not bruised, feel firm in your hand and slightly hard.
Avoid selecting those that are too large as they are often old, which makes them very hard, and loses their sweetness and characteristic aroma.
