How to make Chicken Sticky Rice with Lotus Leaves and Fried Chicken

  • Cooking Sticky Rice

    The sticky rice you bought should be soaked in water for 8 hours or overnight.

    After that, rinse the sticky rice until it is drained, mix in a little salt, and then place it in a steamer for 45 – 60 minutes until the rice is cooked.

    Tip: After soaking, the sticky rice will be very easy to break, so be gentle while rinsing!

  • Prepare and Marinate the Chicken

    Clean the chicken with salt, then cut the meat and discard the bones.

    Place the prepared chicken in a bowl, then add 1 teaspoon of minced onion, 1 tablespoon of minced lemongrass, 1 teaspoon of minced garlic, 1/2 teaspoon of pepper, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, mix well and marinate for 20 minutes.

    Chop the green onion finely, then heat a pan on the stove, add a little cooking oil until the oil is hot, then add the onion and turn off the heat immediately, mixing well to cook the onion.

    Dried lotus seeds should be soaked in water, then drained and washed clean. Bring a pot of water to a boil, add a little salt, and cook the lotus seeds for 15 minutes, then remove and drain.

    You place the lotus leaf in a bowl, then add the chicken first, followed by the mixed sticky rice. You wrap the lotus leaf and then place it in a steaming basket, cover it, and steam for 20 minutes.

  • The good chicken meat will have a characteristic golden-yellow skin. The outer layer of skin is thin, feels smooth to the touch, is not too bumpy, and has good elasticity.
  • The inside of the chicken meat has a natural pinkish-red color, not too light or too dark. Especially, the chicken meat should not have any bruises or blood spots.
  • If buying pre-processed and packaged parts, you should carefully observe the expiration date and packaging date. Check if the bag’s openings are intact.

How to clean chicken without a foul smell

  • First, you prepare a pot of water and add some tamarind leaves, then bring them to a boil. When the water boils, put the chicken that has been bled into it and blanch for about 3 – 5 minutes to allow the water to penetrate the chicken feathers. However, do not soak too long as it will cause the chicken meat to peel off.
  • After that, wait until it cools slightly, then proceed to pluck the chicken feathers. You need to pluck closely and firmly to remove all the fine feathers (down) of the chicken. Rinse the chicken with clean water several times to firm up the skin.
  • Cut off the oil gland at the tail of the chicken; if not usable, you can also cut off the tip of the chicken’s tail to avoid affecting the dish’s flavor.
