  • Prepare the Ingredients

    Buy pre-cleaned eel from the market; to clean off the slime and eliminate the fishy smell of the eel, you should use a mixture of salt and lemon juice to rub on the eel several times.

    Then rinse the eel with clean water several times, let it drain, and cut it into short pieces about 3 finger lengths.

How to make Crispy Fried Eel with Tamarind Sauce

  • Preparing the ingredients

    Buy pre-cleaned eel from the market, to ensure the eel is free of slime and fishy smell, rub the eel with some wood ash several times and then rinse thoroughly with water, cutting it into bite-sized pieces.

    Next, use a knife to make several slashes on the cut pieces of eel so that the marinade can penetrate better.

    Pick out any wilted leaves from the cilantro, wash them clean, and then cut them into short pieces about the length of a finger. Chop the chili finely, and peel and mince the shallots and garlic.

    Add 3 ladles of boiling water to a bowl of tamarind, use a spoon to mash and soak for about 10 minutes to extract the sour essence, then strain to collect the tamarind juice.

  • Dusting the eel

    Put the flour and rice flour into a bowl and mix well.

    Marinate the eel with: the minced shallots, 1/3 of the minced garlic, 1/2 teaspoon of seasoning powder, 1/4 teaspoon of monosodium glutamate, mix well and marinate for about 30 minutes to let the eel absorb the spices.

    Once the eel is marinated, add it to the flour mixture, mixing well to coat the eel evenly with the flour.

  • Making tamarind sauce

    Place a non-stick pan on the induction stove with 1/2 tablespoon of cooking oil, when the oil is hot, add the remaining minced garlic and sauté until fragrant and golden, then remove the garlic to a bowl.

    Add 1.5 tablespoons of fish sauce, 4 tablespoons of sugar, 5 tablespoons of tamarind juice, 2 tablespoons of diluted tapioca starch to the pan, simmer over medium heat for about 1 minute until the sauce thickens slightly, season to taste, then turn off the heat.

  • Frying eel

    Heat another pan on the induction stove with 4 tablespoons of cooking oil over medium heat, when the oil is hot, add the coated eel.

    Fry until the eel is golden on all sides, then remove and drain the oil.

    Prepare a plate, lining the bottom with a layer of finely chopped rice paddy herb, then add the fried eel on top and sprinkle half of the fried garlic over it.

    Add some chopped chili, a bit of ground pepper, and the remaining fried garlic to the bowl of tamarind sauce and it’s ready to enjoy.
