- Good eels are those that are of moderate size, with bright and shiny skin.
- Choose eels that have two color parts on their body, with a light yellow belly and a black back.
- Avoid eels that have a black belly, as this is a sign of farmed eels, which are not tasty, have soft meat, and lack nutrition.
How to prepare minced eel (minced eel) served with rice crackers

Pre-process the eel
To remove the slime from the eel, put the eel and a little salt in a bowl, then use your hands to vigorously rub the eel for about 2 minutes, then rinse thoroughly with water.
Next, use a knife to cut off the head and tail of the eel, while also slitting the belly of the eel and removing the internal organs, then rinse well under running water.
Finally, use a scissors to cut off the spine of the eel and then finely chop it.

Marinate the eel
To marinate the eel, add all the finely chopped chili, chopped wood ear mushrooms, 1 teaspoon of turmeric powder, and 1/2 teaspoon of five-spice powder, then mix well and let it marinate for 15 minutes.

Stir-fry eel and finish
Place a pan on the stove, add 2 tablespoons of cooking oil, adjust the heat to high, wait for the oil to heat up, then add minced shallots and lemongrass to sauté until fragrant.
After about 2 minutes, when the lemongrass and shallots turn brown and emit a fragrant aroma, add the marinated minced eel, stirring well on the stove to ensure the eel cooks evenly without burning.
Next, after stir-frying for about 7 minutes, season with 1/2 teaspoon of seasoning powder, 1 tablespoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1.5 tablespoons of oyster sauce.
Reduce the heat and stir well for another 2 minutes to let the eel absorb the seasonings, finally add the coriander and Vietnamese coriander, stir-fry for an additional minute, then taste and adjust the seasoning before turning off the heat.
Transfer the stir-fried minced eel to a plate, sprinkle with a little roasted peanuts, and it’s ready to enjoy.
