How to Prepare Spicy Salted Potato Shake

  • Preparing the Potatoes

    Peel the potatoes, wash them clean, cut them into long strips, and let them drain.

    Tip:

    You can briefly boil the potatoes with a little salt for about 30 seconds to 1 minute, then remove the potatoes and place them into a bowl of ice water for about 5 minutes or let them drain and then put them in the fridge for about 30 minutes so that the potatoes become crispy and delicious when fried, without being chewy or limp when cooled.

    Put the drained potatoes into a bowl of flour. Use food wrap to cover the bowl tightly and shake gently so that the flour coats the potatoes evenly.

    Crack the eggs into the bowl and beat them. Add the floured potatoes into the egg bowl, then coat them with breadcrumbs to ensure the breadcrumbs stick evenly to the potatoes.

How to prepare French fries

  • Prepare the ingredients

    First, wash the potatoes under water tap to remove dirt. Then, peel the potatoes and soak them in a basin of water with a little salt. This method will help prevent the potatoes from browning.

    Next, cut the potatoes into equal long pieces.

    Then, place the potatoes into a pot, cover with water, and boil over medium heat for about 15 – 20 minutes until the potatoes are soft.

    Tip: Do not boil the potatoes too soft as they will absorb too much water, making the next step of mixing the flour mushy.

  • Mash and mix the potatoes with flour

    After boiling, remove the potatoes to a bowl and let them cool a bit. Then, add 1/2 spoon of salt to the bowl of potatoes and mash them until smooth.

    Tip: Mashing the potatoes while they are still hot will be easier and quicker.

    Next, you add 15g of powdered sugar and 100g of cornstarch to the mashed potato mixture. Mix the ingredients thoroughly until they are combined. The final mixture will bind together like dough, soft and smooth, and not sticky to your hands.

    Tip: If the mixture is too wet, add more cornstarch. If it is too dry, add a tiny bit of water.

  • Rolling the dough and shaping potato sticks

    You place the dough between two layers of parchment paper, spread it evenly, and roll it out to a thickness of about 1cm. Then, you put the rolled dough in the freezer for about 10 minutes to harden.

    After 10 minutes, take the dough out and cut it into pieces that are 10 – 15cm long and about 1cm wide, evenly. You should cut quickly while the dough is still firm, as it will be easier.

  • Fry the potato sticks

    Add enough cooking oil to the pan to submerge the potatoes. Wait for the oil to heat up, then add the potato sticks and fry over medium heat. At first, the potatoes may stick together, but as they get close to being golden, they will separate easily.

    After about 5 – 7 minutes of frying, once the potatoes are golden, remove them and let them drain. Fry all the remaining cut potato sticks in this manner.

    In a small bowl, combine: 1 tablespoon of mayonnaise, 1 tablespoon of chili sauce, and 1 tablespoon of ketchup, then mix the mixture well to complete the dipping sauce.

How to Choose Good Potatoes

  • You should choose potatoes with yellow skin because they usually taste sweeter and better than those with white skin.
  • Good potatoes have smooth, shiny skin, and when held, they feel heavy, with a moderate size.
  • To save peeling time, you should choose potatoes with a plump surface and not too many dents.
  • Absolutely do not buy sprouted potatoes as they can cause poisoning when eaten.
  • Potatoes with wrinkled, dry skin that feel light when held should also not be purchased as they are usually old potatoes that have been stored for a long time.

How to peel potatoes without browning and tips to whiten browned potatoes

  • After peeling and cutting into bite-sized pieces, soak the potatoes in a bowl of water mixed with 2 – 3 tablespoons of vinegar (or lemon). Let the potatoes submerge in water for a few minutes, then take them out, rinse with water, and use.
  • Soaking peeled potatoes in water also helps prevent the potatoes from discoloring, and using them immediately avoids bland potatoes.
  • If the potatoes have turned brown, peel off the brown layer and soak them in water; the potatoes will turn white and can be used normally. Another method is to place the potatoes in a pot, cover them with milk, and heat on the stove for a few minutes, then your potatoes will turn white again.

Tips for using leftover oil

  • Cooking oil should be stored in clean plastic or glass containers, never pour back into the bottle of oil you are currently using.
  • Let the cooking oil cool completely. Place a strainer over a glass bowl. You can also line it with a paper towel to ensure no leftover residue, helping to clean the oil and making it safer for the next use.
  • Wait for the oil to filter clean; if you are meticulous, you can filter it multiple times before pouring the oil into a jar, sealing it tightly, and storing it in a cool place.

You can place them in a plastic bag, tie it tightly, and store it in the refrigerator for 1 – 2 days. When eating, just fry them again until hot and crispy.
