  • Prepare the shrimp

When you buy shrimp, wash it thoroughly, peel off the shell, remove the head, and use a toothpick to pull out the intestinal vein.

Then, place the cleaned shrimp in a bowl. Marinate the shrimp with 1 teaspoon of seasoning powder, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and mix the ingredients well.

Add 1/2 teaspoon of garlic powder (or substitute with 1 teaspoon of minced garlic) into the bowl of shrimp. Mix again and marinate for 15 minutes for the shrimp to absorb the seasoning.

Tip: Remember to leave the shrimp tails on, so the dish looks more appealing when fried.

Gradually add 100g of wheat flour and 30g of cornstarch into a bowl. Use a whisk to mix the dry flour mixture thoroughly.

Next, while stirring the flour, slowly add 120ml of sparkling mineral water (or soda) to the mixture. Stir well until the mixture is smooth and free of lumps.

Then, beat one egg and strain it through a strainer into the flour mixture, mix well, and let the batter rest for about 10 – 15 minutes.

Tip: Soda added to the batter will help the fried dish remain crispy and fluffy for longer.

How to Choose Fresh and Delicious Shrimp

  • Fresh and delicious shrimp have clear, bright shells. Do not choose shrimp that have turned cloudy, with black legs or heads, as these are old and not fresh.
  • Fresh and delicious shrimp are straight, with tails curled together. The head and legs should be firmly attached to the body.
  • Shrimp that have lost their heads or have curved bodies are spoiled and should not be purchased.
  • If you hold the shrimp and it feels firm, it is fresh; if it is soft and mushy, it is spoiled.
