    Crack 3 eggs into a bowl, add 1 tablespoon of fresh milk, and use a spoon to beat thoroughly until the mixture is well combined.

    Put the eggs into the pan, place 3 thin slices of unsalted butter on top, then turn on the stove and gently stir with a wooden spoon for about 30 seconds.

    Lift the pan off the heat and let the eggs rest for about 20 seconds, then continue to stir vigorously. Place back on the stove and stir continuously over medium-low heat for another 30 seconds.

    At this point, the eggs have started to cook slowly; remove from heat and add 2 tablespoons of shredded Mozzarella cheese, stirring well.

    • Stir until the eggs are slightly thick; you can turn off the heat, don’t wait until the eggs are completely dry, which will make them dry and hard, not tasty.
