How to make Cocoa Ice Cream

  • Make the cocoa mixture

    Put 20g of cornstarch and 40g of cocoa powder into a pot, then mix well and add 150ml of sweetened fresh milk. Continue stirring until the cornstarch and cocoa powder are completely dissolved in the milk.

    Next, place the pot containing the dissolved cocoa mixture on the stove, cook on low heat until the cocoa mixture simmers, then add the condensed milk.

    While cooking, stir constantly over medium heat for about 5 minutes until the cocoa mixture thickens, then you can turn off the heat.

    Finally, pour the cooked mixture into a bowl and then place the bowl into a larger bowl of water; this method helps our cocoa mixture cool quickly.

  • Whip the fresh cream

    Put 200ml of whipping cream and 30g of sugar into a bowl, use a mixer to whip at medium speed for about 5 minutes until the cream mixture is evenly whipped, then turn off the machine.

    Next, you add the cooled cocoa mixture into the whipped cream bowl and then mix well so that the cocoa and cream blend together to form a cream mixture.

  • Pouring into molds and chilling

    Pour the mixed cream mixture into a bowl or mold, then cover the bowl tightly with plastic wrap and place it in the freezer, letting it sit for about 2 hours.

  • Whipping the cream again

    After letting the cream sit in the freezer for about 2 hours, you remove the plastic wrap and use a mixer to whip it thoroughly, then cover it again with plastic wrap.

    Place it back in the freezer for another 2 hours for the cream to chill, then take it out and whip again, repeating this step about 2 – 3 times to make the cream smoother!

    Finally, after chilling and whipping about 2 – 3 times, you place the ice cream in the freezer to freeze for about 2 hours until it solidifies.

    After the ice cream has solidified, use an ice cream scooper to scrape the ice cream into a cup. Spray a little chocolate sauce on top, and it’s ready to enjoy!

  • Prepare coconut milk

    Add 100g of coconut milk powder into a bowl, then gradually add 200ml of warm water while stirring continuously until the coconut milk powder is completely dissolved.

    After the coconut milk powder is completely dissolved, add 70g of condensed milk, 50g of sugar, 100g of milk powder, and 50g of cocoa powder.

What is cocoa powder?

  • For the Greeks, this powder was also known as “food of the gods” because the word “cocoa” in Greek is pronounced in a way that conveys that meaning.
  • The process of producing cocoa powder involves several stages, from harvesting fresh cocoa pods, fermenting for 2 to 9 days, drying, and then roasting the cocoa beans to enhance flavor and aroma.
  • After the cocoa beans are roasted, they are ground finely and can be mixed with fats and melted cocoa butter to form a mass known as chocolate liquor.
  • This chocolate liquor is then pressed to extract the liquid, and the remaining part is cooled and ground into powder to create pure cocoa powder.

How to distinguish pure cocoa powder from blended cocoa powder

  • When you buy pure cocoa powder, you will smell the strong characteristic aroma of cocoa. Tasting a little, you will sense the bitterness; however, if you taste it carefully, you will notice a mild sourness.
  • In addition, pure cocoa powder, when observed, will have a uniform color ranging from light brown to reddish brown depending on the level of alkalization.
  • On the other hand, blended cocoa powder will have a pale, light color, uneven, and may even contain small white specks inside.
  • Tasting it will reveal a sweeter flavor due to the addition of a lot of milk sugar that overshadows the bitterness of cocoa. It will not smell as fragrant as pure cocoa but will have additional aromas like chocolate, vanilla, milk, etc.
