How to make Braised Pork with Boiled Eggs in Coconut Water

  • Prepare the supporting ingredients

    Shallots and garlic, peel off the skin, chili remove the stem and wash clean. Then, put garlic, shallots, and chili into a mortar and pound them finely.

    Fresh coconut, extract the coconut water, and filter it through sieve to remove the residue.

    Boil a pot of water, add 1 teaspoon of salt, when the water boils, add the eggs and boil for 5 – 10 minutes, then take them out and put them immediately into a bowl of cold water. Wait for the eggs to cool, then peel off the skin, rinse once with water, and place on a plate.

  • Preparation and Marination of Meat

    Buy pork belly, rinse it with water, and use a knife to scrape the skin clean, then rinse again with water.

    To eliminate the odor of the meat, bring a pot of water to a boil, adding 1 teaspoon of salt. Once the water boils, add the meat and blanch it for about 1 minute. After 1 minute, remove the meat and rinse it with cold water, then drain and cut into thick square pieces about 2 finger lengths, and place them in a large bowl.

    • To effectively remove the odor of pork, you can soak the meat in diluted saltwater for about 5 minutes, then remove and rinse with water and let it drain.
    • Alternatively, you can also rub salt onto the piece of meat and leave it for about 5 minutes before rinsing it clean, which also helps eliminate the pork odor.

    Add to the bowl of meat 3 tablespoons of fish sauce, 2 tablespoons of sugar, 1 teaspoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1 teaspoon of salt, and a mixture of minced onion, garlic, and chili. Mix well to coat all the spices on the meat and marinate for about 1 hour.

  • Making Braised Pork with Coconut Water

    Place a pot on the stove, add 3 tablespoons of cooking oil, 1 tablespoon of sugar, and keep the heat medium to dissolve the sugar gradually. When the sugar begins to dissolve, use chopsticks to stir well until the sugar is completely dissolved, then continue to cook until the sugar turns a caramel color, add the marinated pork into the pot and stir evenly for 2 minutes to sear the meat.

    Next, add fresh coconut water until it just covers the meat, then cover the pot and adjust the heat to medium. You should braise the meat for about 1.5 hours until the meat is tender.

  • Prepare the ingredients

    Place a pot on the stove, add about 200ml of water, add the duck eggs and boil for 15 minutes. After 15 minutes, the eggs are cooked, remove them and drop them immediately into a bowl of cold water and carefully peel off the shell.

    Next, place a frying pan on the stove, add 2 tablespoons of oil. Once the oil is hot, add 1 teaspoon of corn starch, adjust the heat to low, and gradually add the eggs to fry until golden, then transfer to a plate.

    Tip: When frying the eggs, add 1 tablespoon of corn starch to the oil to prevent oil splatter.

    Rinse the pork briefly with water. To eliminate the unpleasant smell of the meat, soak it in a mixture of diluted salt water for about 5 minutes, then remove and drain.

    After the pork is drained, cut it into pieces about 2 finger widths thick and place it in a bowl.

    Peel the onion and garlic, then rinse. Remove the stalk from the chili and rinse it clean. Then, put the onion, garlic, and chili into a mortar and pound them finely.

    To marinate the pork, add 5 teaspoons of sugar, 2 teaspoons of salt, 1 teaspoon of monosodium glutamate, and all the minced onion, garlic, and chili, then marinate the meat for about 8 hours.

    After 8 hours, place a pot on the stove, wait for the pot to heat up, add the pork and stir-fry for about 3 minutes until the meat is slightly browned. After 3 minutes, pour in 200ml of coconut water, reduce the heat, and cook the pork until the water evaporates and the meat turns a dark brown color, then season with 1 tablespoon of fish sauce, the remaining 200ml of coconut water, and the fried duck eggs, cooking for an additional 20 minutes.

    After 20 minutes, the braising liquid should have reduced, the meat and eggs should be tender, adjust the seasoning to taste, then turn off the heat.
