How to choose fresh and delicious pork belly
- You should choose pork belly pieces that have a balanced amount of meat and fat; this way, it won’t be greasy when eaten.
- Good pork belly will have a layer of opaque white fat, pink-red meat, and a dry membrane on the outside that feels non-sticky when touched.
- It is best to buy meat that still has elasticity when you press it; the pork belly should still be firm.
- When smelling fresh meat, it will have the typical odor of raw meat; spoiled meat will have a foul, rotten, or strange smell.
- Do not buy pork belly pieces with very thin layers of fat as they may come from pigs raised with lean meat enhancers.
- Avoid choosing pieces of meat that are mushy and lose their elasticity and firmness when touched. There may be strange blood spots on the meat.

How to Cook Braised Pork

Prepare the pork belly
After purchasing the pork belly, rinse it briefly with water, then rub the meat with a little salt or alcohol for about 5 minutes, then wash it again thoroughly.
Next, cut the meat into square pieces, with each side about the length of a finger.
Place about 1 liter of water in a pot on the stove and bring it to a boil. Peel the onion and 5 shallots, then chop half of the onion and one shallot into small pieces and add them to the pot of water, along with 1 teaspoon of salt and 1/2 teaspoon of pepper.
Once the water is boiling, add the prepared meat and blanch it for 3 – 5 minutes, then remove it and wash the meat once more with water until it is clean.
Peel 10 cloves of garlic, crush them, then finely chop 3 bulbs of shallots and slice one. Remove the stems from the chili peppers, rinse them, and chop them finely.

Make the braising sauce
In a bowl, combine chopped chili, crushed garlic, finely chopped shallots, 1/2 cup of fish sauce, 1 teaspoon of salt, 1 tablespoon of seasoning powder, 1 teaspoon of pepper, and 1 teaspoon of caramel sauce, stir well to dissolve the seasonings together.

Marinate the meat
Place the briefly boiled meat into the prepared braising sauce mixture, mix well to coat the meat evenly with the sauce. Marinate for about 5 minutes and then pan-sear.

Pan-sear the meat
Add 3 tablespoons of cooking oil to the pan, heat the oil and sauté the sliced shallots until fragrant.
Then add the marinated pork into the pan, sear the skin side of the meat until golden brown, then turn the other sides of the meat to sear until firm.
Remember to keep the marinade for braising the eggs later.

Boiling Eggs
Place the duck eggs in the pot, pour enough water to cover the eggs, add 1 tablespoon of salt and 1 tablespoon of vinegar, and bring the eggs to a boil.
The eggs will boil for about 8 minutes from the time the water starts to boil, then turn off the heat. To cool the eggs down, start peeling them to avoid breaking the eggs, which would expose the yolk and make the braised pork broth cloudy and less tasty. Rinse the eggs briefly with water and let them drain.
Easy Egg Peeling Method:- To make peeling the eggs easier, add 1 tablespoon of vinegar and 1 tablespoon of salt to the boiling water, making sure to add the salt and vinegar before the water boils.
- While the water is still not boiling, gently stir the boiling water with a spoon; this method will help the yolk of the egg stay centered after cooking, making it less likely to expose the yolk when peeling.
- After turning off the heat, discard all the water, leave the eggs in the pot, cover it, and shake gently to loosen the eggshells. Add water to cool the eggs down, and you can easily peel the eggs.

Stewing eggs
Add the marinated meat broth from earlier into the pan, bring to a boil, and add the boiled eggs. Stir evenly over medium heat for about 5 minutes for the eggs to absorb the seasoning.
Once the eggs are evenly coated and have a nicer color, add the water from 2 fresh coconuts, 1/2 cup of fish sauce (rice bowl), and 1 tablespoon of sugar, stew the eggs for about 5 minutes then remove them.
Tip: You can poke the eggs with a toothpick to help them absorb the seasoning better. -
Stewing pork
Arrange the grilled pork belly in the pressure cooker with the skin side up. Strain the broth from the stewed eggs to keep only the clear liquid, add it to the pot with the meat, and add 2 cups of water (rice bowl).
Stew the pork in the pressure cooker for 20 – 30 minutes in Manual mode. After 20 minutes, let the meat rest for another 40 minutes.
Next, add the stewed eggs and cook for another 20 minutes to complete the dish.
Note: Do not stew the meat with onion and garlic as it will make the meat broth cloudy. -
