Ingredients for Curry Clam Stir-fry Serves 3

Clam meat 800 gr Bird’s eye chili 6 pieces Curry powder 10 gr (about 1 packet) Minced lemongrass 1 cup Minced garlic 2 tablespoons Fish sauce 2 tablespoons Cooking oil 1 tablespoon White wine 2 teaspoons Common seasonings a little (salt/ seasoning powder/ sugar)

How to cook Curry Stir-fried Clams

  • Prepare the clams

    Wash the clams you bought with water 2 times to clean them. Next, soak the clams in water with a little white salt and 5 chopped chili peppers for 2 hours to let the clams release dirt and sand.

    Then, put the clams into a pot and boil until the clams just open, then turn off the stove.

    Take the clams out into a basket to cool down, then separate the shells to take the clam meat.

    Put the clam meat into a bowl, add 1 teaspoon of salt, 2 teaspoons of white wine, and mix evenly for about 2 minutes to eliminate the fishy smell, then rinse with clean water.

  • Marinate the clams

    Marinate the cleaned clam meat with 2 tablespoons of fish sauce, 2 teaspoons of seasoning powder, 1.5 tablespoons of sugar, and 10g of curry powder for 30 minutes to absorb the flavors.

  • Make stir-fried razor clams with curry

    You place a pan on the stove, add 1 tablespoon of cooking oil, and heat it over medium heat.

    When the oil is hot, add 2 tablespoons of minced garlic and sauté until fragrant. Add 1/2 cup of minced lemongrass and stir-fry for about 2 minutes until both garlic and lemongrass are fragrant and golden brown.

    Then, add the marinated razor clams and stir-fry for about 5 minutes before adding 1 sliced chili pepper, stir well for another 2 minutes, adjust the seasoning to taste, and turn off the heat.

How to Cook Stir-fried Razor Clams with Chives

  • Prepare the razor clams and ingredients

    Place the razor clam meat in a bowl, pour in enough white wine to cover the meat, then gently squeeze the razor clams to remove dirt and the fishy smell.

    Then, rinse again with clean water and drain.

    Wash the garlic, peel, and finely chop it.

    Wash the chives, drain, and cut into bite-sized pieces about 2 finger joints long.
