Fish cake 500 gr Quail eggs 20 eggs Shallots 2 bulbs Garlic 5 cloves Green onions 2 stalks Cilantro 2 stalks Cooking oil 100 ml Soy sauce 1/2 tablespoon Fish sauce 3 tablespoons Common seasoning a little (seasoning powder/MSG/sugar/pepper)

How to choose fresh and delicious quail eggs

  • You can use your hand to feel the surface of the eggshell; if the surface is rough and slightly textured, it means the eggs are fresh, while a smooth surface means the eggs have been stored for quite some time.
  • When choosing, hold the egg close to your ear and shake it. If there is no sound, it means the egg is still fresh; if you hear a sound like liquid sloshing, it means the egg is old.
  • Do not buy eggs that show a large air cell when held up to the light, as these are old eggs that may have gone bad.

  • Prepare the ingredients

    Peel and finely chop the shallots and garlic. Clean and chop the green onions and coriander.

    Cut the fish cake into pieces about 1/2 finger thick for easy eating.

  • Boil and marinate the quail eggs

    Put a pot on the stove, add water to about half the pot, and bring it to a boil over medium heat.

    When the water starts boiling, increase the heat and add the quail eggs to the pot. Boil the eggs for about 3 minutes, then remove them and place them in a bowl of ice water, gently stirring and soaking for 4 – 5 minutes.

    After that, peel the quail eggs and put them in a bowl. Marinate the quail eggs with 1/2 tablespoon of soy sauce and let them sit for about 20 minutes for the flavors to absorb.

    How to quickly and easily peel quail eggs

    • To peel quail eggs easily, the boiling step is very important. You can put the eggs in the pot with a little salt and gently add water.
    • Boil until it starts to bubble, reduce the heat, cover, and boil for about 4 – 5 minutes to ensure the eggs are cooked just right without being dry.
    • While boiling, use chopsticks to stir clockwise, as this helps the yolk concentrate in the center, making it very visually appealing when cut.
    • You can use chopsticks to test if the egg is cooked; if you can easily pick it up, the egg is done.
    • Put the eggs in ice-cold water or under running water to cool them down, then place the eggs in a container with a little water, seal it tightly, and shake gently to help the shells come off evenly without taking too much time.

  • Fry fish cake

    Place a pan on the stove, add 100ml of cooking oil to the pan and heat it until boiling.

    When the oil is boiling, add the fish cake and fry over medium heat for about 5 minutes until the fish cake is golden and puffed up. Then, remove the fish cake and place it on a plate lined with a layer of paper towel.

    Caramelize the sugar by adding 2 tablespoons of sugar and 1 tablespoon of water into the pan, simmer on low heat until the mixture turns a nice brown color, then add 1/3 cup of water (rice bowl) and shake the pan well before turning off the heat.

    Place a pot on the stove, add all the chopped shallots, minced garlic, and green onion tops to sauté until fragrant. Next, add 1 cup of water, the caramelized mixture, and adjust to medium heat.

    When the water in the pot boils, add the fried fish cake along with 1/4 teaspoon of monosodium glutamate, 3 tablespoons of fish sauce, 1/2 teaspoon of seasoning powder, and the marinated quail eggs.

    Simmer the mixture on low heat for about 10 minutes, until the braising liquid reduces, then season to taste, sprinkle with a bit of ground pepper and chopped green onions, cilantro to finish.

  • Prepare the ingredients

    Buy pork, to eliminate any unpleasant smell, soak the meat in diluted salt water for about 15 minutes, then take it out, rinse with cold water, and let it drain.

    After that, cut the pork into pieces about 1 finger thick for easy eating.

    Rinse the fish cake in 2 – 3 washes of water for cleanliness, then cut diagonally into bite-sized pieces.

    Fresh chili should have the stems removed and be washed clean. Peel and finely chop the garlic. Remove the roots from the coriander, wash it clean, and then chop it small.

    Effective ways to eliminate the smell of pork:

    • Blanch the pork in boiling water to remove the meat smell.
    • Use 3 – 4 shallots, peel and crush them, throw them into the water, add the meat, and boil for about 3 minutes; the shallots will help eliminate the unpleasant smell very well.
    • Alternatively, use crushed ginger or white wine to rub on the meat, then wash it again with cold water to help remove the pork smell.
