Where to buy white chocolate?

  • White chocolate can be easily found at stores selling baking ingredients, supermarkets, or purchased online on e-commerce sites.

How to make Matcha Lava Cake

  • Mix the butter and white chocolate

    Place a bowl over a pot of hot water, then add 80g of white chocolate and 50g of unsalted butter into the bowl. Use a whisk to stir and mix until the mixture melts and is well combined.

  • Mix the matcha flour mixture

    Add 1 egg, 1 egg yolk, and 15g of sugar into the bowl. Use a mixer to beat the mixture for 7 – 8 minutes until the eggs turn a creamy white color. This is the desired consistency.

    Next, sift into the bowl 25g of all-purpose flour, 10g of matcha powder, and the white chocolate butter mixture, then gently fold the ingredients together using a spatula.

    Finally, use a mixer to blend the mixture on low speed for about 3 minutes until smooth and creamy.

    Preheat the oven at 180 degrees Celsius for 10 minutes.

What is cake flour?

How to Make Matcha Chocolate Lava Cake

    Place a new bowl over a pot of hot water, then add 100g of white chocolate, 60g of unsalted butter, and 40g of sugar. Stir well until the mixture is well combined.

    Next, add 3 eggs one at a time to the bowl, stirring well until each egg is fully incorporated.

    Sift 60g of cake flour and 30g of matcha powder into the butter-egg-chocolate mixture and use a whisk to mix until smooth.

    Preheat the oven to 170 degrees Celsius for 10 minutes.

    Brush a thin layer of butter into the mold, then scoop about 1 – 2 tablespoons of matcha batter into the mold.

    Next, squeeze a little dark chocolate filling in the middle and cover it completely with a layer of matcha batter. Then, bake the cake for 12 – 14 minutes at 170 degrees Celsius until done.

    After baking, place the cake on a rack for about 5 minutes to cool.
