Cooking the candy
Put sugar into a non-stick pan, add a little water and cook until the sugar dissolves. Blend the pineapple, add coconut milk, 1/2 lime juice, and diced dried bananas into the sugar pan to cook. Stir the bananas continuously until the bananas break down, then continue cooking. Next, add grated coconut, ginger, lime peel, and rum to continue cooking.
Continue cooking until the candy thickens, nearing (heavy-handed) then add peanuts and stir well until the candy is “done”. If it’s not cooked enough, the candy will be crumbly, eating like a piece of sugar; if it’s overcooked, it will be hard. The properly cooked candy will be chewy, but not crumbly.
Check if the candy is done as follows: take a bowl of cold water, drop in a piece of candy, use your hands to roll it back; if it feels chewy and firm, the candy is done; if it crumbles in the water, it’s not done yet and needs further cooking. Properly done candy will be very sticky and heavy, shining with a beautiful red color from the banana. -
Shaping and cutting the candy
