- Do not buy shrimp with spread-out, loose tails, missing tail fins, and not neatly arranged. They may have been caught a long time ago or soaked in preservatives.

How to choose fresh and delicious gourds
- For this dish, you can use either fragrant gourd or ribbed gourd.
- You should choose fruits that are of medium size, feeling heavy when picked up.
- Observe that the stem part is still fresh, and there are no black spots on the skin.
- Do not choose fruits that feel light, are soft, have a hollow inside, the skin is scratched or punctured, and the stem is withered. Such fruits are usually due to spoilage or poor preservation during transportation.
How to make stir-fried gourd with fresh shrimp

Prepare the ingredients
For the shrimp, peel off the shell, remove the head, and make a light cut along the back of the shrimp to pull out the dark vein.
Soak the shrimp in diluted salt water for about 5 minutes, then rinse and drain.
How to quickly and correctly remove the shrimp’s vein:
- Count back from the tail of the shrimp to the second groove connecting the two segments of the shrimp shell, insert a toothpick through this spot, and gently pull the dark vein out.
- Alternatively, you can also use a toothpick to pry out the head part of the shrimp’s body to see the dark vein. Gently pull this dark thread out with your hand, and the shrimp will be clean.
After buying the gourd, you use a knife to cut off the ends, peel it clean, and rinse it several times with water, then drain and cut the gourd into round slices about 1/2 inch thick.
Green onions and cilantro are washed and chopped finely.

Marinate the shrimp
Put the shrimp in a bowl, then add 1/2 teaspoon of salt, 1 teaspoon of monosodium glutamate, 1 teaspoon of soy sauce, 1 teaspoon of seasoning powder, and a little pepper. Mix well and let the shrimp absorb the seasoning for about 15 minutes.

Stir-fried Luffa with Shrimp
Place a pan on the stove, add 1 tablespoon of cooking oil and heat it up, then pour in the marinated shrimp, stir-frying over medium heat until the shrimp is cooked and turns a beautiful orange color.
Next, add the luffa and stir-fry with the shrimp on high heat for about 10 minutes until the luffa is cooked.
Then, add 1 teaspoon of seasoning powder, 1 teaspoon of fish sauce, and 1 teaspoon of sugar to the pan. Stir well for about 2 minutes for the ingredients to absorb the seasoning, taste and adjust as needed, then turn off the heat.

Tip: For this dish, you don’t need to add more water as the luffa will naturally release a small amount of water.
