Stir-fry tofu
Cut the tofu into long strips, about half the thickness of your finger.
Heat a pan on the stove, add 4 tablespoons of water, then add 1 tablespoon of vegetarian fish sauce, 1 tablespoon of soy sauce, 1 tablespoon of vegetarian oyster sauce, 5 thin slices of ginger, and finally the tofu.
Stir-fry the tofu over medium heat for about 4 – 5 minutes; during the process, you should stir it so that the tofu absorbs the seasoning evenly. When you see the sauce is almost dry, add 1 tablespoon of cooking oil, stir well, and then turn off the heat.
Tip: If you like it spicy, you can add a chili pepper to the stir-fried tofu. -

- Pay attention to the scent; it should not be musty or have any strange odors, and there should be no white mold spots on the mushrooms.

- You should choose mushrooms with long, thick, and firm stems; these mushrooms will be sweeter than those with smaller stems.
- Mushrooms that are harvested for a long time and stored at cold temperatures often have black or bruised tips.

Prepare the ingredients
Soak the dried shiitake mushrooms in cold water for about 30 minutes until soft, then rinse several times with water and cut into thin strips.
Proper way to soak shiitake mushrooms:- Soak the mushrooms for 30 minutes to several hours to soften; do not soak for less than 30 minutes to avoid uneven softness, which affects the taste.
- To soften the mushrooms quickly, soak them whole; do not slice or cut them before soaking.
- After soaking, place the mushrooms in a colander to drain quickly; this will help them retain their shape and texture when cooked, preventing them from becoming mushy.
Clean the oyster mushrooms, squeeze out excess water, and then tear into small pieces. Wash the carrots and cucumbers, peel them, and then cut into fine strips. Chop the herbs finely, and rinse the bean sprouts, trimming off both ends.
Soak the dry tofu skin in cold water for about 15 – 20 minutes until soft, then rinse and squeeze dry. Tear it into bite-sized pieces.

Next, heat a pan and add 100ml of hot oil, then put all the marinated tofu skin into the pan and fry for about 4 – 5 minutes until the tofu skin is evenly golden on both sides, then remove and let it drain oil.

Heat a pan and add 1 tablespoon of cooking oil, 1 teaspoon of minced green onion, and sauté until fragrant. Then add shiitake mushrooms and oyster mushrooms, a little soy sauce (about 1 teaspoon), and stir-fry for about 2 – 3 minutes until the mushrooms are cooked.
Finally, add the shredded carrots and stir-fry for an additional 2 minutes.
