How to Make Strawberry Tart

  • Knead and Rest the Dough

    First, you need to separate 1 egg and place it in a bowl (rice bowl). Next, use a whisk to beat the egg yolk and egg white together until well combined, and only take 25g of the egg to make the cake.

    Then, prepare a large bowl and add 100g of flour, 1/2 teaspoon of salt, 15g of sugar, and 70g of unsalted butter, then use your hands to knead until the butter is evenly mixed into the flour for about 3 – 4 minutes.

    After the ingredients have combined, gradually add 25g of egg while kneading the dough evenly. Continue kneading for about 7 – 10 minutes until the mixture forms a smooth dough that no longer sticks to your hands.

    Finally, cover the dough tightly with plastic wrap and place it in the refrigerator refrigerator to rest for about 45 minutes.

    Tip: Before making the cake, remember to chill the butter in the refrigerator beforehand!

  • Shaping and baking the crust for the first time

    After 45 minutes, take the dough out and knead it lightly for about 2 – 3 minutes. Next, roll the dough very thin and cut it into round slices so that the diameter of the dough is larger than the diameter of the cake mold!

    Place each slice of dough into the mold and press gently with your hand to ensure the crust fits snugly in the mold and is about 0.3 cm high (remove any excess if present).

    Then, place the tray of dough in the freezer for 2 hours. After that, take the dough out, line each surface of the crust with pre-cut parchment paper, and put a little rice on top to secure it.

    Preheat the oven for 10 minutes at 170 degrees Celsius. Next, bake the crust for about 10 minutes at the same temperature and with the dual heat setting.

    Tip: After shaping, you should use a fork to poke small holes on the surface of the dough so that when baking, the crust can release air, preventing it from puffing up.

  • Bake the crust for the second time

    After 10 minutes, take the cake out of the oven and remove the parchment paper and rice. In the next step, continue to bake the crust for the second time at a temperature of 170 degrees Celsius and with the same dual heating mode as the first time for about 5 minutes, and you’re done!

  • Make the egg cream mixture

    To make the cream filling, separate 2 egg yolks and place them in a large bowl. Add 30g of sugar and use a whisk to beat for about 3 minutes until the sugar dissolves.

    Next, add 25g of cornstarch to the egg mixture through a sieve to make the powder smoother.

    Continue to use the whisk and stir the mixture continuously for about 7 minutes to combine the ingredients well.

  • Cook the strawberry jam cream filling mixture

    You prepare a small pot and add 100ml of fresh milk, 50ml of coconut milk, and 100ml of whipping cream, then cook the mixture for about 3 – 4 minutes over medium heat until warm.

    After that, you slowly pour the heated milk into the egg cream prepared in the previous step and stir well.

    Next, you pour the mixture into the pot and cook over medium heat for about 7 minutes until it thickens. While cooking, remember to stir continuously to avoid burning!

    Once the mixture thickens, turn off the heat and add 7g of unsalted butter, stirring continuously for about 3 minutes.

    Next, add 100g of strawberry jam and mix well to finish the cream filling!

    You pour the strawberry jam cream into a bowl and cover it with plastic wrap and let it cool for about 10 minutes.

    You continue to mix the dough mixture thoroughly until the ingredients blend together to form a smooth, yellow dough that does not stick when touched.

    You cover the bowl tightly with plastic wrap and place the dough in the freezer of the refrigerator for about 45 minutes until the dough is firm and can be rolled out.
