  • Soak gelatin

    Add 3g of gelatin powder and 15ml of cold water into a bowl, then stir well and soak the gelatin for about 10 minutes to expand.

    Place a pot on the stove, add 45gr of sugar, 15ml of water, and cook over medium heat until boiling.

    When the mixture boils, swirl the pot to spread the mixture evenly, continue to do this over low heat until the sugar turns a brown color like that of a cockroach, then turn off the heat.

  • Cook caramel with fresh cream

    Next, add to the caramel pot: 100ml of unsweetened fresh milk, 200ml of whipping cream, soaked gelatin, and stir well.

How to make Panna cotta with caramel sauce

  • Cook the caramel sauce mixture

    Place a pot on the stove, add 200g of sugar, 80ml of water, then bring to a boil over medium heat until boiling.

    When the mixture starts to change color, reduce to low heat and continue cooking until the mixture turns a brownish-yellow color like that of a cockroach, then turn off the heat.

    Next, add 240ml of heavy cream, 2 tablespoons of unsalted butter, 1 teaspoon of vanilla extract, and 1 teaspoon of salt. Stir well until the mixture is combined, then let it cool.

    Pour 80ml of warm fresh milk into a bowl, add 1 tablespoon of gelatin powder, then stir well, and let it sit for about 10 minutes for the gelatin to bloom.

    Put a new pot on the stove, add 480ml heavy cream, 240ml unsweetened fresh milk, 100gr sugar, and 1 teaspoon of vanilla extract.

    Stir the mixture over medium heat until warm and steam begins to rise. At this point, add the soaked gelatin into the pot and continue to stir until the gelatin dissolves, then turn off the heat.

    Tip: To prevent the cream mixture from being denatured and losing nutrition, do not let the mixture boil; just heat it until steam rises.

    Pour the cream mixture into a cup, let it cool, then place it in the refrigerator for about 3 – 4 hours until fully set.

    After that, take the set cream out and drizzle 2 tablespoons of caramel sauce on top of each cup, then sprinkle a little chopped hazelnut, and it’s ready to enjoy.
