How to make Crispy Fried Yam Cake

  • Prepare the yam

    Peel the yam, wash it clean, then cut it into small pieces and steam or boil for about 20 minutes.

    When the yam is cooked, put it in a bowl and mash it with a fork.

  • Mixing the dough

    You take the mashed taro into a bowl, add 140 gr of tapioca flour, 100 gr of corn flour, 50 gr of sugar, and 60 gr of condensed milk, then use your hands to mix until the dough is smooth.

    Next, wrap the dough tightly with plastic wrap and let it rest for 30 minutes.

  • Shaping the cake

    After letting the dough rest for 30 minutes, you rub your hands with a little tapioca flour to prevent sticking, then divide the dough and shape it into the desired cake form.

    You add 100 ml of cooking oil to a hot pan, heat the oil until it boils, then add each piece of dough, using chopsticks to stir so that the cake turns golden evenly.

    When frying the cake, be careful to keep the heat moderate so that the cake cooks evenly inside, avoiding burning on the outside while the filling inside is not cooked.

    Tips for frying crispy and delicious sweet potato cakes:

    • To prevent the sweet potato cake from sticking to the pan, you should add the cake when the oil is just boiling, not too hot or not hot enough.
    • Fry with a moderate amount, not too many, to avoid reducing the oil temperature and the cake not being crispy and easily sticking to each other.

    Next, place the taro in the steamer for about 10 – 15 minutes until it’s cooked, then take the taro out and put it in a bowl, and use a spoon to mash it until smooth.

    Tip:

    • You can replace all-purpose flour with tapioca flour!
