  • Prepare the bananas

    Peel the bananas, slice them into thin pieces, and then soak them in a bowl of ice water mixed with lemon juice for 10 minutes.

    Preheat the air fryer at 180 degrees Celsius for 15 minutes.

    Line with parchment paper and arrange the bananas in the air fryer, then dry at 150 degrees Celsius for 5 minutes. When the surface of the bananas begins to set, flip them over and continue drying for another 5 minutes.

    After 5 minutes, reduce the temperature to 100 degrees Celsius and dry each side for 10 minutes.

How to choose good coconuts

  • To make delicious dried coconuts, you should choose mature coconut flesh.
  • Press your hand into the coconut flesh or scratch the coconut shell near the stem; if the flesh is hard and cannot be pressed, is difficult to press, feels dry, or scratches without peeling the shell, it indicates that it is a mature fruit.
  • Mature coconut flesh is usually dry, thick, hard, close to the shell, and has a dark brown color or has many bumps on the outside.
  • You can also gently tap the coconut; if you hear a deep sound, it means the coconut is still young, with thin flesh and not sweet water. Conversely, if you hear a high-pitched sound, it is a mature coconut, with thick flesh and very tasty water.

  • Grate the coconut

    Grate the coconut flesh into long strands about 2 – 3 fingers wide.

    Then, rinse the coconut flesh 5 – 6 times with water and let it drain.

    Add the grated coconut into a bowl with 200g of sugar, mix well and marinate the coconut for 6 hours until the sugar dissolves and the coconut becomes translucent.
