Basa fish 300 gr Minced garlic and onion 40 gr Green onions 3 sprigs (chopped) Chili 1 piece (chopped) Chili sauce 1 teaspoon Green onions 3 sprigs (chopped) Fish sauce 2 tablespoons Color sauce 1 tablespoon Lemon juice a little Common spices a little (sugar/ salt/ seasoning powder/ pepper) Cooking oil 2 tablespoons

How to cook Braised Basa Fish

  • Prepare the basa fish

    When you buy basa fish, rub salt on the fish and wash it with clean water to reduce the sliminess. Then soak the fish in diluted lemon juice or water mixed with a bit of vinegar for about 5 minutes to eliminate the fishy smell.

    Next, cut the fish into small pieces for easy eating.

  • Marinate the fish

    Put the fish pieces in a large bowl, add 1/2 of the minced onion and garlic, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1 teaspoon of chili sauce, 2 tablespoons of fish sauce, 1 tablespoon of coloring sauce, and 1/2 teaspoon of ground pepper.

    Mix gently and let it sit for about 30 minutes for the fish to absorb the seasoning.

    Tip: Marinating the fish with chili sauce will help the braised fish have a very eye-catching golden-orange color!

  • Cook the fish

    Place a clay pot on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add the remaining minced onion and garlic, turn the heat to low, and sauté until fragrant.

    Then, add the marinated fish pieces, turning them gently to absorb the onion and garlic flavor. Next, increase the heat, add all the marinating liquid, and add 50ml of water.

    When the fish boils, reduce the heat to a low simmer and continue to braise the fish for another 15 minutes.

    Small tip: Every 5 – 7 minutes, gently turn the fish once to ensure it cooks evenly on both sides without breaking apart!

    When the fish has changed color and the sauce thickens, add the chopped green onions and chili on top, and simmer for another 3 – 5 minutes to complete.

Basa fish 500 gr Chopped scallion 1 tablespoon Minced garlic 2 tablespoons Minced shallots 2 tablespoons Bird’s eye chili 1 piece Lemon juice a little (can be replaced with vinegar) Coconut milk 3 tablespoons Soy sauce 1 tablespoon Fish sauce 3 tablespoons Cooking oil 1 tablespoon Common seasoning a little (Salt/ Sugar/ Pepper/ Seasoning powder)

How to make Braised Basa Fish in Coconut Milk

  • Prepare the fish

    To remove the slime and fishy smell, after purchasing the basa fish, you should rub it with salt, soak it in water mixed with a little lemon juice for about 5 minutes, then rinse with clean water and drain.

    Cut the fish into small, bite-sized pieces.

  • Marinate the fish

    Marinate the fish with 1 tablespoon of chopped green onion, 1 tablespoon of chopped shallots, and 1 tablespoon of minced garlic, 1/3 tablespoon of seasoning powder, 1/3 tablespoon of sugar, 1/3 tablespoon of pepper, 3 tablespoons of fish sauce, and 1 tablespoon of caramel sauce.

    Then mix well and let the fish absorb the spices for about 1 hour.

  • Cook the fish

    Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil, and wait for the oil to heat up before sautéing 1 tablespoon each of minced garlic and shallots.

    Next, add the basa fish to the pot, add 300ml of boiling water, cover, and braise for about 25 – 30 minutes.

    When the time is up, open the lid, add 3 tablespoons of coconut milk, sliced chili peppers, and season to taste, then cook for another 10 minutes until the sauce thickens, then turn off the heat.

  • For live fish: The freshest fish is still alive; you should choose ones that swim vigorously, have clear eyes, pink gills, shiny scales, and skin without any unusual colors.   • For refrigerated and pre-prepared fish: You can rely on signs from the fish’s eyes, anus, gills, scales, mouth, and body, as well as smell, to select good fish.
