How to prepare Vegetarian Stingray Dried Fish

  • Pound the spice mixture

    First, peel the onion and slice it into thin pieces.

    Then, put the onion into a mortar to pound it finely, adding 1 teaspoon of salt, 1 teaspoon of vegetarian seasoning, 2 teaspoons of chili powder, and 1 teaspoon of monosodium glutamate. Pound and mix the mixture again until well combined.

  • Cut the vegetarian ribs

    After purchasing the vegetarian ribs, soak them in water for about 30 minutes to soften. Take the ribs out, wash them clean, and squeeze them dry.

  • Mix the marinating mixture

    In a large bowl, sequentially add 10g of lemongrass powder, 250g of fermented tofu, 20g of chili sauce, 2g of five-spice powder, 10g of unsalted butter (melted), 2 tablespoons of soy sauce, and 4 teaspoons of vegan seasoning powder, and mix the ingredients well until combined.

    Take the spare ribs (after marinating), squeeze out excess seasoning (if any) and place them on a tray (or rack) to dry in the shade.

    • Before sun drying, you should spray a mist of alcohol (70 degrees) on the surface of the dried fish to prevent flies from landing during the drying process.
    • While drying, you should check and flip both sides evenly to ensure the spare ribs dry properly.

    Add a little oil to the pan over low heat, then lay the spare ribs in to fry until golden brown on both sides. The remaining dried fish can be placed in a sealed bag (or food container) and stored in the freezer. When you want to eat, just take it out and fry.
