Peel and finely chop the shallots and garlic. Clean the green onions and cut them into small pieces. Rinse the chili briefly with water and cut it into small segments.

Marinate the fish
Put the drained fish into a bowl, add minced onion and garlic along with chopped green onion tops.
Then add 2 tablespoons of sugar, 1 tablespoon of seasoning, 1/2 teaspoon of salt, 2 tablespoons of fish sauce, and 1 teaspoon of pepper into the bowl.
Use chopsticks to mix everything well, then let it sit for about 10 – 15 minutes for the fish to absorb the seasoning.

When the garlic and lemongrass are fragrant, add the pineapple and use a ladle, spatula to stir-fry briefly until golden brown on both sides.
When the pineapple is golden, add the fish, at this point you should keep the heat high so that the fish quickly firms up and doesn’t break apart.
Continue to add the marinade from the bowl into the pot, add a small cup of boiling water. Then continue to cook until the sauce thickens, then turn off the heat.
