How to Cook Caramelized Vegetarian Pineapple with Ginger

  • Prepare the Ingredients

    Cut off the roots of the green onions, wash them clean, and let them drain. Then, cut the small part of the green onion head and set it aside before continuing to chop the green onion leaves.

    Wash the ginger, peel it, and then cut it into strips.

    Peel the pineapple and remove the eyes. Next, wash the pineapple clean, let it drain, and cut it into bite-sized pieces.

  • Stir-fry pineapple

    Place a pan on the stove, turn to medium heat, and add 2 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add the pineapple and stir-fry for about 2 – 3 minutes. After that, add 2 teaspoons of sugar to the pan and stir well for another 1 – 2 minutes before turning off the heat and transferring the pineapple to a plate.

    Tip: Stir-frying the pineapple first will help it absorb the spices better during braising and save time.

  • Make the sauce

    Heat a pan that has just been stir-fried on the stove, turn the heat to medium, and add 1/2 tablespoon of cooking oil to the pan. When the oil is hot, add the chopped green onion and ginger, stirring for about 30 seconds.

    Next, reduce the heat, add 3 tablespoons of soy sauce and 2 ladles of water to the pan, then bring to a boil.

    When the mixture in the pot boils, add 3 teaspoons of sugar and 1 teaspoon of seasoning, then taste and adjust to your liking.

    Braise the pineapple until the liquid in the pan is nearly evaporated, then add chopped green onions and sliced chili, braising for another minute before turning off the heat.

  • Prepare the ingredients

    Buy pineapple, peel it, remove the eyes, and then wash it clean. After that, cut the pineapple in half, remove the core, and cut it into bite-sized pieces.

    Chop off the roots of the green onions, wash them clean, let them drain, and then chop them finely.

    Peel the purple onions, slice them thinly, and mince them. Remove the stems from the chili, wash it clean, chop it finely, and then mince it.
