Oyster mushrooms 500 gr Green onions 3 stalks Red onions 5 bulbs Garlic 5 cloves Bird’s eye chili 1 piece Vegetarian seasoning 1/2 teaspoon Vegetarian fish sauce 1 tablespoon Color water 2 tablespoons Cooking oil 2 tablespoons Common spices a little (salt/ sugar/ monosodium glutamate/ pepper)

How to make Braised Oyster Mushrooms with Pepper

  • Prepare the ingredients

    Soak the oyster mushrooms in diluted salt water for 20 minutes, then rinse with water and let them drain.

    Wash the green onions and chop them finely. Peel the red onions and garlic, and mince them. Slice the chili thinly.

  • Marinate the mushrooms

    After washing the mushrooms, add 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of vegetarian seasoning, 1 tablespoon of sugar, 1 teaspoon of pepper, 1/2 teaspoon of minced garlic, 1 teaspoon of minced shallots, 1 tablespoon of vegetarian fish sauce, 2 tablespoons of coloring sauce, mix well and marinate for about 15 – 20 minutes for the mushrooms to absorb the seasoning.

    Heat a pan on the stove with 2 tablespoons of cooking oil, when the oil is hot, add the remaining minced shallots and garlic and fry until fragrant over medium heat.

    Next, add the marinated oyster mushrooms and stir-fry on low heat for about 10 minutes until the mushrooms are firm.

    Then add chopped green onions, chili, and 2 teaspoons of pepper and cook for another minute. Adjust the seasoning to taste and then turn off the heat.

    Tip: To keep the rich sweetness of the mushrooms, do not add water during the braising process.

  • Prepare the ingredients

    Buy oyster mushrooms, cut off the stems, wash them in diluted salt water for about 1 minute, then rinse with clean water, and squeeze hard to dry the mushrooms.

    Place a pan on the stove with 2 tablespoons of cooking oil and heat over medium heat. When the oil is hot, add 1 tablespoon of minced scallions, half of the minced lemongrass, and 1 tablespoon of minced chili, stir for 1 minute.

    Then add 1/2 teaspoon of turmeric powder, mix well, and add the oyster mushrooms and the remaining minced lemongrass, stirring well.

    Season with 1 teaspoon of soy sauce, 1 tablespoon of vegetarian seasoning, 1/4 teaspoon of salt, and stir-fry on high heat for about 2 – 3 minutes to prevent the mushrooms from releasing water. Adjust the seasoning to taste, then turn off the heat.

    Tip: To ensure the dish retains a fragrant aroma and a richer flavor when finished, you should divide the lemongrass into two parts and add them in succession as instructed above.
