- Prefer to choose wood ear mushrooms that have large, thick ears, few small stems, dark amber color, slightly shiny (on the upper surface of the mushroom) and coffee milk color (on the underside of the mushroom).
- Avoid choosing wood ear mushrooms that are too black, as these may become mushy when soaked in water and are less crunchy.

Prepare the ingredients
Soak the wood ear mushrooms in water for 10 minutes until they expand, then rinse them again with clean water and chop finely. Peel the shallots and mince them.
