How to choose fresh and delicious eggplants

How to Make Steamed Eggplant with Scallion Oil

Prepare Ingredients
Remove the stem from the eggplant, wash it clean, then cut it into thin slices about 1/2 finger width.
Cut off the roots of the scallions, remove any yellowing parts, wash them clean, then chop them finely and place them in a bowl.

Steamed Eggplant
Place a steaming pot on the stove, add about half a pot of water, then turn on high heat. Arrange the eggplant slices evenly in the steaming pot, cover, and steam for about 10 – 15 minutes until cooked and tender, then turn off the heat and transfer the eggplant to a plate.

Make Scallion Oil
Add 2 tablespoons of cooking oil to a pan on medium heat. Once the oil is hot, add the chopped scallions and sauté quickly for about 1 minute until cooked and tender.
Season with: 1 teaspoon of seasoning powder, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, and stir well until the seasonings are fully dissolved, then turn off the heat.

Completion
Transfer the eggplant to a plate, use a spoon to mash it a little, add all the green onion oil and mix well. At this step, you can still adjust the seasoning to your taste.
