How to choose fresh and delicious pangasius
- Fresh and delicious pangasius is best when alive, so if possible, choose to buy fish in this condition.
- If the fish has been cleaned and cut into pieces, carefully observe the skin to see if it is still fresh, the flesh should be firm and not mushy, and the eyes should be clear and bulging.
- When selecting fish, check the gills; if the gills are still red, it is fresh, but if they are pale or dark, the fish is spoiled.
How to Prepare Braised Basa Fish with Pineapple

Prepare the Ingredients
After buying the basa fish, rub salt on it and wash it with clean water to reduce the sliminess. Then soak the fish in diluted lemon juice or water mixed with a bit of vinegar for about 5 minutes to eliminate the fishy smell. Next, cut the fish into small pieces for eating.

Marinate the Basa Fish
After cutting the basa fish into pieces, marinate it with 2 tablespoons of sugar, fish sauce, chopped green onion, minced garlic, minced chili, and monosodium glutamate, then mix well. Let the fish absorb the seasoning for about 30 minutes.

Place a pot or deep pan on the stove, wait for it to heat up, then add about 2 tablespoons of cooking oil and 1 tablespoon of sugar. Keep the heat low until the sugar completely dissolves and turns golden brown.

Cooking Fish
Once the caramel sauce is ready, add all the marinated fish, keep the heat medium for about 2 – 3 minutes, then add 1/2 cup of water. Adjust the heat to a simmer, occasionally using chopsticks to gently stir so both sides of the fish cook evenly.
After cooking the fish for about 15 – 20 minutes, when both sides are golden and the sauce has thickened, add the prepared pineapple.
