How to choose good pork belly

  • You should choose pieces that are pink in color, avoid pieces that are pale or dull because they may have been left out for too long, are likely spoiled, and have a strong odor.
  • Fresh meat usually has elasticity, so you should press it lightly with your hand; if it springs back, it’s good, but if it feels soft, mushy, or slimy, then do not buy it.
  • You should buy meat in the early morning to select the freshest pieces for yourself.

How to choose sweet and delicious pineapples

  • You need to choose pineapples that feel heavy, have a characteristic aroma, and have a bright natural yellow color. Avoid choosing those that are uneven in color, have dark brown spots, or yellowing towards red, as they are overripe.
  • Round, short pineapples will have more flesh than long, tubular ones.
  • The larger and sparser the eyes of the pineapple, the better it is. After peeling off the eyes, you will have thick flesh, and large, sparse eyes indicate that the pineapple is mature and ripened naturally without chemicals.

    After purchasing the pork, rub it clean with coarse salt, rinse it with water, then place it in a colander to drain. Cut the meat into bite-sized pieces.

    • To completely eliminate the odor of pork, before preparing the dish, briefly dip the piece of meat in boiling water for about 2 minutes, then remove and rinse with cold water.
    • Another handy tip is to add a little white wine to the water used for blanching the pork. The alcohol can effectively neutralize the unpleasant smell.

    You place a pan on the stove over medium heat, wait for the pan to heat up, add 2 tablespoons of cooking oil, 1 tablespoon of annatto oil, and sauté garlic and onion until fragrant, then add the pork belly and shrimp and stir-fry until the shrimp turns red.

    You heat a pan over medium heat, add 1.5 tablespoons of cooking oil, then sauté minced garlic until fragrant, then add shrimp and stir-fry with 2 teaspoons of sugar, gently stirring for 2 minutes until the shrimp turns red, then add coconut milk and fresh coconut water.

Quick Tips for Removing Shrimp Vein

  • You count backward from the shrimp’s tail to the second groove connecting the two shell segments, insert a toothpick through this spot, and gently pull the black vein to remove it from the shrimp.
  • You don’t need to use a knife to cut the shrimp’s back; you can also use a toothpick to pry the head of the shrimp out, and you will see the black thread. Gently pull this black thread out with your hand, and the shrimp is clean.
