Cooking Dried Lotus Seeds
Wash the dried lotus seeds thoroughly, then soak them in water for about 4 hours to allow them to expand.
Remove the lotus seeds and rinse them several times with clean water.
Then, pour enough water to cover the lotus seeds in a pot and add ½ teaspoon of salt, cover, and bring to a boil for about 15 minutes until the seeds are soft and tender.

Marinating lotus seeds with sugar
When the lotus seeds are cooked, take them out and rinse them again with clean water, then let them drain.
Put the lotus seeds in a pot, pour in the sugar and stir well. Marinate the lotus seeds with sugar for about 6 hours or longer, so that the lotus seeds absorb the sugar more and dissolve completely.

Cooking the jam
Using a pot with a thick bottom or a thick pan, turn on the stove to simmer over low heat, pour in the sugar-soaked lotus seeds to bring to a boil, stirring gently and continuously so that the lotus seeds dry out.
Cook the jam until the lotus seeds are dry, then pour them onto a large tray to cool. The sugar should stick evenly around the lotus seeds and be dry all over.
Note: You should not use chopsticks to stir or mix too vigorously as it may crush the lotus seeds.
