How to choose fresh and delicious kumquats

  • Good kumquats usually have a green, evenly colored skin, with a light, characteristic fragrance of the kumquat tree.
  • Additionally, you should choose kumquats with smooth skin, round and plump shape, feeling heavy and firm in hand.
  • Avoid choosing kumquats that are large but light in weight, as these will have less juice and be dry.
  • Moreover, kumquats that are too yellow, soft to the touch, and have an unpleasant odor should also be avoided.

  • Prepare Longan

    First, peel the longan and wash it briefly with water to remove any dust from the skin that may stick to the flesh.

    Then use a knife to cut a line on the flesh of the longan to remove the seed.

    Put the longan flesh that has been separated from the seed into a jar, then add about 200g of sugar into the jar and place it in the refrigerator to marinate for about 3 hours for the longan to soak up the sugar syrup.

    Wash the kumquat thoroughly, cut it into small pieces, and remove the seeds.

  • Making Jam

    You place a pan on the stove, add the lychee that has been soaked in sugar into the pan. Then add chopped calamondin to the pan and cook with the lychee over high heat.

    When the syrup thickens slightly, you take the lychee out and continue to cook the syrup in the pan until it thickens to achieve a nicer color.

    When the syrup in the pan turns a dark brown color, reduce the heat, add the lychee back in, and continue to cook for another 10 minutes until the lychee becomes firm, then transfer to a plate.

  • Sun Drying

    You put the lychee onto a tray lined with clean plastic at the bottom to retain the syrup, then bring it out to sun dry until the jam is dry, after which it can be stored in a jar for later use.

  • Prepare Longan

    Peel the longan, remove the seeds, then wash clean and drain.

    2kg of longan, after peeling, has about 400g of longan flesh, you add 1.2kg of sugar according to the ratio of 1 part longan to 3 parts sugar.

    Put a pan on the stove on medium heat, add the marinated longan and cook for about 20 minutes until the longan turns brownish-yellow and the syrup thickens.
