How to make Dried salmon using an oven

  • Preparing the salmon

    Rinse the salmon once with water and then soak it in a bowl of diluted salt water for about 15 minutes. Next, use a knife to scrape off the fish scales and any black residue on the fish skin.

    After that, rinse the fish again 2 – 3 times with water, cut the fish into thin slices about half a finger’s length, and let them drain.

  • Marinate salmon

    Pour 2 liters of water into a basin and add 1 tablespoon of salt to dissolve. Next, soak the fish in this diluted saltwater for at least 6 hours.

    After soaking for the required time, remove the fish, let it drain a bit, and then use a paper towel to pat the fish dry.

    Arrange the fish on a tray lined with non-stick paper, and place it in the oven at 80 degrees Celsius for 8 – 10 hours.

    Tip: To make the dried salmon tastier, you need to use paper to thoroughly dry the fish.

  • Prepare the salmon

    The salmon should be cleaned of scales, gently rub salt onto the fish for a few minutes and then rinse with water until clean.

    Next, cut the fish into pieces about 2 finger widths thick.

  • Marinate the fish

    Place the fish in a bowl and mix well with 2.5 teaspoons of salt, 2 teaspoons of sugar, 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of ground pepper, 2 teaspoons of chili powder, minced garlic and onion.

    After the fish is evenly coated with the seasoning, cover the bowl tightly with plastic wrap and refrigerate for about 10 hours.

  • Dry the fish

    After refrigerating for the required time, take the fish out and let it sit at room temperature for about 2 hours to warm up.

    Next, arrange the fish on the trays, set the machine to 60 degrees Celsius for 8 hours.

    After drying for about 3 – 4 hours, flip the fish to ensure even drying. Continue drying for a full 8 hours.

    Tip: To keep the dehydrator clean and make it easier to clean, place aluminum foil underneath.

    Dried salmon that is salty, sweet, and spicy, not dry but soft and sweet meat. You can fry it crispy or grill the dried salmon to enjoy as a snack or with rice, both are delicious.

How to choose fresh and delicious salmon

  • To make dried salmon, you should choose to buy whole salmon fillets. Choose pieces of fish that are pink or orange in color, looking fresh, with a dry surface, pressing down feels elastic and firm, and the fish has a characteristic smell, not a rotten smell.
  • Do not choose to buy if you see the fish is dull in color, soft and mushy, leaking water, and has a foul smell, indicating the fish has been stored for too long.

How to prepare salmon without the fishy smell

  • After cleaning the scales, soak the salmon in a basin of water mixed with 2 tablespoons of lemon juice and 1 tablespoon of salt, gently stir for about 1 minute, then take it out and wash it clean.
  • Additionally, soaking the fish in fresh milk for about 10 minutes and then rinsing it off also effectively removes the fishy smell.
  • Another method is to soak the fish in water mixed with a little white wine and smashed ginger for about 10 minutes, then rinse it clean and it is ready to be cooked.
