    To clean and eliminate the fishy smell, scrape off the scales, remove the innards, squeeze 1 lemon and rub it on the fish, then rinse with clean water to remove the fishy smell.

    • Method 1: Soak in rice water for about 7 minutes, then rinse with clean water.
    • Method 2: Soak in crushed ginger water for about 7 minutes, then rinse with water.
    • Method 3: Use vinegar or white alcohol to wash the fish and rinse with clean water.

    Take a basin of water, add 75g of coarse salt into the basin, stir until the salt dissolves for about 5 minutes, then add 1 tablespoon of MSG.

    Then, put the fish into the basin, marinate for about 1 to 2 hours. After that, place the fish in the refrigerator for about 5 hours to let the fish absorb the seasoning before drying.

    Tip: If you cannot sun-dry to dry the fish, you can dry them using a microwave for 7 – 8 hours at a temperature of about 80 degrees Celsius.

  • Pomfret belongs to the family Sciaenidae, which is a family of fish in the order Perciformes that live in the sea, distributed in tropical and subtropical marine areas.
  • Pomfret is a type of fish that is inexpensive and is caught year-round. In Vietnam, they are concentrated in the coastal areas of the Gulf of Tonkin and the Central Coast.

How to preserve dried pomfret

  • After drying the pomfret, place it in a plastic bag or sealed box/jar, seal it and store it in a dry place, avoiding damp areas as it will cause the dried fish to become soft and spoil easily.
  • If you can use the dried fish within a short time, it is advisable to store it outside or in the refrigerator refrigerator for convenience in processing.
  • For long-term storage of dried fish, you should dry the fish thoroughly and store it in the freezer of the refrigerator, which can be used for about 3 to 6 months.
  • If you do not store dried fish in the refrigerator, after 2 to 3 weeks, take the fish out to dry again to prevent it from becoming damp and help preserve it better.
  • If possible, you should place the dried fish in a plastic bag and use a vacuum sealer to remove all the air and put it in the refrigerator, which will help preserve the dried fish for a long time without fear of spoilage.
