How to prepare Butter Fried Abalone

  • Prepare the abalone

    After cleaning the abalone, we use a knife to cut diagonal lines to create a cross shape on the abalone meat.

    Tip: Remember not to skip this step because cutting in a cross shape will help the seasoning penetrate the abalone meat better, making the flavor richer. Additionally, the abalone will look more beautiful and appealing than usual.

  • Make garlic butter sauce

    Place a pan on the stove and turn on medium heat. Wait for the pan to heat up, then add butter, stirring until the butter melts completely and covers the entire surface of the pan.

    After the butter has melted, we add minced garlic and minced ginger, stirring until golden and fragrant.

    Next, add 4 tablespoons of fish sauce and lemon juice into the pan, stirring well for the ingredients to blend together. Wait until the mixture turns a light amber color, at which point the aroma from the garlic and butter will be wafting up.

  • Add abalone

    Add all the prepared abalone into the mixture and cook for about 1 minute, stirring well or gently shaking the pan to let the seasoning soak into the abalone meat. When the abalone expands and turns golden, we turn off the heat.

    Use chopsticks to arrange the abalone on a plate, sprinkle green onions and chili on top, then pour all the remaining mixture from the pan over it.

How to Prepare Fried Abalone with Garlic and Chili

  • Preparing the Abalone

    Prepare a pot of water and a bowl to steam the abalone or use a steamer to process the abalone.

    Place the abalone in and steam for about 5 to 10 minutes.

    After steaming, take the abalone out and place it in cold water, using a brush to scrub around the edges and surface of the abalone to remove any dirt, then rinse again with clean water.

    Next, use a spoon to separate the abalone from its shell.

    Once the abalone is separated, use a knife to make diagonal cuts in a cross pattern on the abalone meat.

  • Prepare the other ingredients

    Put the egg whites into a bowl and use a whisk or chopsticks to beat until the eggs foam up, creating a layer of bubbles.

    Use a sieve to remove the layer of bubbles on top, we only use the layer of egg whites below.

    Add 3 tablespoons of water to the 10g of flour that has been prepared, mix well to create a white mixture, then pour this mixture into the egg whites above and mix well for both to combine. Next, add 1 teaspoon of salt and 1/2 teaspoon of brown sugar (can be replaced with granulated sugar) into the mixture and stir until dissolved.

    Next, we place a pan on the stove over medium heat, wait for the pan to heat up, then add cooking oil to prepare for frying the minced garlic. When the oil is hot, add 1/2 of the prepared garlic and fry until golden brown, then use a sieve to drain the oil and place it in a bowl. Keep the oil in the pan for frying the abalone.

  • Fried Abalone

    Put the abalone into the mixture of egg whites and flour, coating the abalone so that it absorbs the flour. Use chopsticks to stir the abalone back and forth to let the mixture penetrate the abalone meat. Wait until the oil is hot, then add the abalone to fry on high heat.

    Wait until the abalone is golden brown, then use a strainer to lift it out to drain the oil.

    Tip:

    • It is advisable to use chopsticks to pick up each piece of abalone to put into the frying oil, do not pour them all at once because the abalone will stick together and not cook evenly.
    • While frying the abalone, remember to use chopsticks to stir the abalone continuously so that it cooks evenly and does not burn.

    Heat a pan on medium heat, add a little oil to the pan, and wait for the pan to heat up. Then add half of the remaining minced garlic along with the previously sautéed garlic into the pan with minced chili, stirring well until golden brown.

    When the garlic and chili become fragrant, add the minced onion and stir well until the onion is cooked.

    Once the onion is cooked, add all the fried abalone to the pan, stirring until the abalone is golden brown, then turn off the heat.

    Use chopsticks to place the abalone on a plate, and pour the remaining garlic and chili mixture from the pan over the abalone.

How to choose fresh and delicious abalone

  • When buying abalone, you can gently press the edge of the abalone with your finger; if you feel it bounce back, the abalone is fresh. Alternatively, you can identify good abalone by looking for ones with a thick, round body, plump meat, uniform body shape, no cracks, and no unpleasant odor. When picked up, you usually see a red line in the center.
  • You should choose abalone of moderate size as they will have a more intense flavor compared to small or oversized abalone.
  • Fresh abalone can be either live or frozen. In general, fresh abalone tends to be more expensive, so you should buy from reputable seafood vendors to ensure quality, avoiding counterfeit or low-quality abalone.

How to properly clean abalone

  • Fresh abalone needs to be cleaned before use. You can clean it by using a toothbrush to scrub around the edge of the abalone, then use a sharp knife to separate the shell from the abalone and cut off the black intestines underneath. Rinse it clean once more.
  • Separate the abalone meat from the shell and rinse it under running clean water to remove any black substances sticking to the abalone meat.
