How to Make Yangzhou Fried Rice (recipe shared by a user)

    • Prepare the Ingredients

First, cook the rice with a suitable amount of water so that the rice is sticky, fluffy. You should use ST 25 rice so that when fried, the rice will be stickier and fluffier. After the rice is cooked, scoop it into a bowl to cool.

Sausages and lap Cheong should be diced into small pieces. For carrots, peel them using a knife, wash them clean, and then dice them. For green beans, remove the strings on both sides, wash them, and then dice them.

For green onions, remove the yellowed leaves and roots, then wash and chop them finely. Next, peel the garlic, then mince it.

    • Fried Rice

You turn on the stove to heat the non-stick pan. Then, add 2 tablespoons of cooking oil into the pan. Wait until the oil is hot, then add the minced garlic and sauté until fragrant.

Once the garlic is golden, add the Chinese sausage and hot dog and stir-fry over medium heat for about 5 minutes, seasoning with 1 teaspoon of fish sauce for aroma. Next, add the prepared carrots and green beans to stir-fry together.

After about 2 – 3 minutes, add the rice and stir well over low heat. At this point, add 1 spoon of monosodium glutamate, 1/2 teaspoon of sugar, and 1 teaspoon of salt, then continue to stir well for the rice to absorb the seasonings.

You only need to fry for 10 – 15 minutes for the rice to dry and become crispier. After that, sprinkle some chopped green onions and a bit of ground pepper, you can adjust the seasoning to your taste before turning off the stove.

How to choose fresh and delicious eggs

    • You should buy fresh chicken eggs with a slightly rough, bumpy shell, dark brown color, no black spots, and when shaken, there are no strange sounds.
    • Do not buy old chicken eggs with a shiny, smooth shell, pale color, many black spots, and when shaken, they make noise.
    • Hold the egg under sunlight and observe. If the yolk and the white are attached, it indicates that the egg is fresh. If the yolk and the white are loose and separate, it indicates that the egg has been stored for a long time.

How to choose fresh and delicious carrots

    • Delicious carrots have a moderate size, cylindrical shape, smooth skin, and feel firm and heavy when held.
    • It’s best to choose carrots with fresh green tops that are firmly attached to the root; these are fresh carrots, recently harvested.
    • Carrots that are a deep orange color with a small core will taste sweeter than those with a large core and lighter color.
    • Avoid buying carrots that are too large, have a thick core, or have a thick shoulder as these are old carrots and not tasty. Additionally, do not buy soft, wilted, or misshapen carrots.
