    For straw mushrooms, soak them in diluted salt water for about 5 minutes. Then rinse them with water and let them drain. Next, cut them into small dice.

    Snap peas have both ends broken off, washed clean, carrots peeled and then diced.

    Remove the husk and silk from the corn, wash it clean, and then use a knife to cut off the kernels.

    Wash the cilantro, removing yellow leaves and roots, then chop it finely. Shallots are peeled and then minced.

    Place a pan on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add all the chopped shallots and stir until the shallots turn golden brown and fragrant, then add the vegetarian ribs and stir-fry for about 30 seconds.

    After 5 minutes, add 1 bowl of rice (the bowl used for soup) and stir continuously to mix the rice and vegetables together. After frying for 4 minutes, adjust the heat to medium.

    Fry for another 3 minutes, season to taste for your family and turn off the stove. Serve the rice on a plate, sprinkle a little pepper, and place some coriander on top and enjoy.
