How to choose delicious, sweet, and sticky pumpkin:
In general, you should choose pumpkins that are heavy, deep orange in color, firm, with little flesh, solid in hand, and have smooth skin without any spots or black marks, not bruised or rotten. Additionally, you should select those with a stem length of about 2 – 5 cm because those with shorter stems may spoil faster.
- The round pumpkin is naturally cut into relatively even sections, with a hard rind that is orange-yellow or mixed with dark green when ripe, yellow flesh, sweet and fragrant taste, and relatively sticky texture, suitable for making soups.
- For the gourd pumpkin, choose mature ones with skin that is a mix of green and orange-yellow, a hard rind, and lighter yellow flesh compared to round pumpkins. Gourd pumpkins are much softer and have a sweet, rich flavor, making them suitable for cooking desserts, blending into cake ingredients, or making nutritious pumpkin milk for the whole family.

How to make Vegetarian Shrimp Balls

Prepare the ingredients
Peel the pumpkin, remove the seeds, wash it clean, and then cut it into thin slices as shown. After that, put it into a pot and steam until soft. Once cooked, take the pumpkin out and mash it.
Chop the green onions.
Cut the vegetarian ham (ham chay) into small cubes as shown.
Tip for quickly peeling pumpkin:
- Use a sharp peeler to remove the skin around the pumpkin and hold the pumpkin firmly with the other hand.
- If your peeler is not sharp enough or you don’t have one, you can cut the pumpkin in half horizontally and then use a regular knife to peel the skin vertically.
- Use a knife to cut the pumpkin in half. Then continue cutting each half into 3 – 4 pieces depending on the size of the pumpkin.
- Use a spoon to scrape out the flesh inside or gently use a knife to separate the flesh.
- Finally, just cut to the desired size and prepare the dish.

Take the steamed shrimp balls into a bowl, add about 50g of flour to the bowl, and roll evenly so that the flour sticks around the shrimp ball.

Soak the white wood ear mushrooms in water until they soften, cut off the stems, then shred them.
Chop the green onions.
Peel the cassava and dice it.
Dice the vegetarian ham as shown.
Tips for Soaking Dried Wood Ear Mushrooms Properly:
- Soak the dried wood ear mushrooms for about 3 – 4 hours until they soften, avoid soaking too long or leaving them overnight, which can produce many toxins in the mushrooms that are harmful to health.
- Do not use hot water to soak the mushrooms for quicker softening. Although the mushrooms soften faster in cold water, the morpholine in the mushrooms does not have enough time to neutralize, which is not safe.
