How to choose good onions

  • To choose good onions, select round bulbs with light brown skin, fresh and shiny, and not peeling too much. The tip of the bulb should be intact, not bruised or rotten.
  • Choose bulbs that still have roots at the bottom, dry, and not wet.
  • Avoid choosing oversized bulbs with shiny skin. Bulbs that are sprouting should not be used as they may negatively affect health.

How to make Fried Sausages with Fish Sauce

  • Prepare the ingredients

    Slice the sausages diagonally on the surface for even cooking and an attractive shape, cut off both ends of the collagen casing for easier frying and to prevent oil splatter.

    Peel the onion, wash it clean, and dice it.

    Wash the chili and let it drain.

  • Mixing fish sauce with garlic and chili

    Add 3 chili peppers and 3 cloves of garlic into a mortar, use a pestle to pound them into a paste, then transfer to a bowl.

    Squeeze the juice from 2 lemons, then add it to the bowl with the pounded garlic and chili.

    Season with 3 teaspoons of sugar, 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, 1/3 teaspoon of salt, 1/2 teaspoon of pepper, 1 tablespoon of water, and mix well to combine the flavors.

  • Frying sausage with fish sauce

    Place a pan on the stove, add 3 tablespoons of cooking oil into the pan. Once the oil is hot, add the sausages and fry until they are golden brown, then remove them, placing paper towels underneath to absorb the excess oil.

    Now continue to use the oil in the pan where you just fried the sausages, add diced onions and stir-fry evenly.

    Next, add the fish sauce mixture you just made and stir until the mixture thickens. Then add the sausages and stir to ensure they are well coated with the garlic and chili fish sauce.

    Transfer to a plate and you can enjoy it right away.

    Use a pair of chopsticks to hold the sausage tightly, then use a knife to score the surface of the sausage with several diagonal cuts, but make sure they are separate.

  • Mix chili powder and coat the sausages

    Prepare 100g of tapioca flour and 1/3 cup of spicy chili powder, mix them well together. Crack 2 eggs into a bowl and beat them.
