How to choose good green bananas

  • To make this dish more delicious, you should choose raw green bananas.
  • Choose a bunch of bananas that are dark green, firm, and evenly curved. If they have small black spots that look like dust, choose those; these are fresh bananas that have not been treated with chemicals.
  • Do not choose bananas that are ripe or turning yellow; the more raw they are, the faster and better they will fry than bananas that are soft or nearly ripe.

How to Prepare Green Bananas with Sugar

  • Prepare the Bananas

    Prepare a bowl with 1 liter of clean water, 1/2 lemon (squeeze for the juice), and 1 tablespoon of salt. Cut off both ends of the green bananas, peel off the green skin, and place them into the prepared bowl of water.

    Soak for about 3 minutes, then rinse thoroughly with clean water, and prepare another bowl of clean water to soak the sliced bananas.

    Use a peeler to cut the bananas lengthwise into thin slices as shown in the picture, soaking the bananas in the prepared water while cutting. Finally, let them drain and get ready for frying.

    • To help the green bananas stay whiter, soak them in saltwater and lemon juice.
    • To prevent the bananas from turning black, peel deeply to remove all the banana skin and peel quickly.

    Prepare a pan with about 400ml of cooking oil, heat the oil until it is really hot, then add a few sliced bananas to fry.

    Fry on medium heat until you see the bananas turn a golden color on both sides and no longer stick together.

    Prepare a piece of oil-absorbent paper or a sieve to place the fried bananas on to drain the oil.

    Continue frying until all the bananas are done, then pour the remaining oil from the pan into a bowl and use a paper towel to clean the pan.

  • Caramelizing Bananas with Sugar

    Place the pan back on the stove, add 200g of sugar to the pan and stir until the sugar melts, boils, and thickens slightly as in the picture, then add a few fried bananas, stirring well on low heat.

    Continue stirring until the sugar coats all the bananas and the bananas gradually dry out with a layer of sugar on the outside. Fry the remaining bananas in the same way.

    Wait until the banana jam cools completely, and then you can enjoy it.
