Prepare the chicken
Wash the chicken thoroughly with water, plucking out any remaining feathers.
Then soak the chicken in diluted salt water mixed with a bit of crushed ginger and white wine for about 10 – 15 minutes, and rinse thoroughly with several changes of water to eliminate any odors.
Finally, let it drain, using a clean towel or paper to dry the chicken.
How to clean chicken without odor
- To prevent the chicken from smelling, you need to remove all feathers, including fine down feathers, to ensure the chicken is clean and less odorous.
- Mix a solution of vinegar and salt in a ratio of 2 salt : 1 vinegar, then rub it all over the chicken, scrubbing multiple times before rinsing thoroughly with clean water.

Continue to add 2 tablespoons of water, 2 tablespoons of soy sauce, 2 tablespoons of fish sauce, 2 tablespoons of honey, then stir well and bring to a boil for about 3 – 5 minutes over medium heat, then turn off the heat.
