For live chickens
- Choose chickens with bright red combs, shiny feathers, pinkish vents, and no unusual fluids.
- The chicken’s legs should be slim, evenly yellow, not wrinkled, and the crop should not be hard, indicating the chicken is healthy.
- When lifting the feathers, the skin should be thin and soft; gently squeeze the body of the chicken to feel firm, not mushy, with some large yellow streaks under the breast and wings. Beneath the chicken’s wings and armpits, visible meat and blood vessels indicate that the chicken is firm and not fatty.
For pre-prepared chickens
- Choose chicken meat that looks fresh, has no foul or strange odor, and the skin should not show any bruising or discoloration; avoid dark-colored chickens as they are likely to have died before preparation.
- To avoid purchasing water-injected chickens, press on the suspected areas (mainly thighs and breasts) to check; if they feel mushy, slippery, or deformed, do not buy.

How to prepare Grilled Chicken with Lemongrass and Salt

Prepare the whole chicken
The chicken is cleaned, plucked of any remaining feathers (down feathers, small, black ones still stuck to the chicken’s skin), rub a little salt or lemon on the chicken skin to clean it and reduce the odor, then rinse with water until clean and let it drain.
Use a small, sharp knife to carefully remove the cartilage near the vent, keeping the bones of the wings and thighs.
How to clean the chicken without odor
- To prevent the chicken from smelling, you need to completely clean off all feathers, including down feathers, so the chicken is white, clean, and less smelly.
- Mix a solution of vinegar and salt in a ratio of 2 salt : 1 vinegar, then apply it all over the chicken, rubbing several times and then rinsing thoroughly with clean water.
