How to Prepare Grilled Meat Skewers with Vegetables

  • Prepare and Marinate the Beef

Buy beef and pork, rub them carefully with salt, and then rinse with water. Cut into bite-sized pieces.

Add the following to the meat: 1/2 spoon of five-spice powder, 1 tablespoon of seasoning, 1 tablespoon of monosodium glutamate, 1/2 tablespoon of sugar, 1/2 tablespoon of ground pepper, 1 tablespoon of annatto oil, and an additional 1 tablespoon of fish sauce, mix well, and marinate for about 1 hour to allow the meat to absorb the spices.

  • Prepare the vegetables

Bell peppers should be washed clean, cut off the stem and the tail, and use a knife to remove the core inside. Cut into small square pieces suitable for eating.

Onions, peel the skin, wash clean, cut into 4 pieces, then cut in half horizontally, into small triangular shapes.

Carrots, peel off the outer skin, can be cut into any desired shape, here you can cut into moderately sized, even square slices.

Tip for cutting onions without tearing up:

    • If you are afraid of cutting onions that make your eyes sting, you should put the onion in the refrigerator for about 15 minutes before cutting.
    • Or you can also chew on something while cutting the onion, which helps reduce the tiny droplets that spray from the onion to your eyes, making your eyes feel less stingy.

    Note:

    • Carrots should not be cut too thick, as they will be difficult to cook at the same time as other ingredients when grilling.
    • Do not cut too thin either, as they can easily burn!

Use aluminum skewers or bamboo skewers to alternate skewering meat and vegetables in the order you prefer! Skewer slowly until all ingredients are used up.

Place the meat skewers on the hot charcoal, grilling until the meat is firm. Use the remaining marinade, add a little cooking oil, and brush a layer on the outside of the skewers to help the meat become crispy on the outside while remaining flavorful and tender on the inside.

Place the skewers on the hot charcoal grill, and grill until the meat is firm, brush on an additional layer of curry sauce, and grill until the meat is cooked and fragrant.

How to choose good beef

  • You should choose beef that is bright red, not too dark or too white; meat that may be spoiled or injected with chemicals.
  • Press the meat with your finger; if it feels elastic, does not deform, does not leak slimy fluid, and feels dry to the touch, then you should buy it.
  • Choose beef with small, fine fibers; if it feels soft to the touch, with white fat, and avoid meat that has bruises or blood clots, as it is no longer fresh.
  • You should choose female beef as it is usually softer and tastier than male beef; consider this a little tip when selecting meat.
  • If buying meat at a traditional market, it is best to go early in the morning. At this time, the meat has just been cut, providing more options, and because the outside environment is not suitable for preserving meat, it can spoil easily.

How to slice beef without being tough

  • Beef should be cut against the grain for better taste and tenderness.
  • You can put the meat in the freezer for 1-2 hours; this makes it much easier to cut.

How to eliminate the smell of meat

  • You can rub the beef with lightly roasted ginger that has been crushed, as ginger is effective in eliminating the smell of beef; then simply rinse with water.
  • You can also soak the beef in white wine for about 15 minutes, then rinse with water, which helps the meat become tender, absorb flavors better, and effectively eliminate odors.

How to choose good pork

  • You should choose pork that is bright pink, not too pale or dark red; especially avoid selecting pieces of meat that are white and have a greenish tint, as they are spoiled and inedible.
  • You can try pressing the piece of meat with your hand; if it feels elastic, does not deform, and does not leak slimy fluid, then you should buy it.
  • It is best to buy from reputable stores that ensure food safety and hygiene!

How to choose good bell peppers

  • You should choose peppers that still have stems, have shiny skin, bright colors, are whole without bruises or cracks.
  • Choose peppers that feel a bit heavy when held, are firm to the touch, and feel slightly hard and crispy; avoid wilted or soft peppers as they may be spoiled and not fresh.
  • For grilling, you should choose peppers that are divided into 3 parts at the bottom of the stem, which usually have a richer flavor than those divided into 4 parts.

How to choose quality onions

  • Fresh onions should be round in shape, with a smooth, shiny outer skin that has a beautiful orange-yellow color, not faded, and tightly hugging the inner part of the bulb.
  • When buying, choose bulbs that feel firm when held, are of a relatively medium size, avoiding bulbs that are too large or too small.
  • Do not choose bulbs with torn skins, misshapen, have tiny dark spots, or completely missing roots. These are older bulbs that no longer retain their freshness.

Tip for you:

  • In addition to grilling with a charcoal stove, you can also grill using an oven or electric grill.
  • With an oven, grill skewers at a temperature of 150 degrees Celsius for about 10 minutes.
