  • Based on color: You should choose tomatoes with bright red, evenly colored skin. If the skin is intact, without scratches, and plump, it is a fresh tomato.
  • Based on aroma: Natural ripe tomatoes usually have a mild scent that can be easily noticed when smelled. In contrast, tomatoes that are artificially ripened do not have any aroma.
  • Based on the stem: You should choose tomatoes that still have their stem attached, with the stem looking fresh and not wilted, tightly attached to the top of the tomato.

  • Prepare the ingredients

    First, prepare a basin of water mixed with 1 tablespoon of salt.

    Trim both ends and peel the sides of the green beans, then soak them in the saltwater for 10 minutes, then rinse with clean water. Once the beans are dry, cut them diagonally into bite-sized pieces.

    Next, finely chop the shallots and garlic.

    Cut the tomatoes into wedges.

    For the green onions, cut them into pieces about half the length of your finger.

  • To check for ripeness, gently press on the skin of the eggplant. A ripe eggplant will leave an impression after you press on it. If the eggplant feels hard and the color changes from pinkish purple to light purple, it means the fruit is old and should not be bought.
  • Additionally, if you notice eggplants with wrinkled skin or many blemishes on the skin, it’s best not to buy them. This may indicate they have been stored for too long.
