  • Choose long fruits that feel heavy, with shiny skin, and no blemishes, dark spots, or insect bites.
  • Depending on the family’s preferences, select green papaya, whether still young or slightly yellowing. However, cooking with papaya that has a slightly yellowish flesh is the sweetest and most delicious.

How to cook Braised Pork Leg with Papaya

  • Prepare the pork leg

    Buy the pork leg and use a knife to scrape off the hair, then use salt to rub it to eliminate the odor, and then rinse it with clean water. After washing thoroughly, use a knife to cut the pork leg into bite-sized pieces.

    Then put the pork leg into boiling water for about 1 minute to remove the dirt and odor. After that, take it out and put it in a bowl of ice water for about 2 minutes, then take it out and wash it again with clean water and let it drain.

  • Prepare the papaya

    Buy green papaya and use a knife to make several cuts on the skin of the green papaya, so that the white latex comes out completely, then wash it clean.

    Next, peel off the skin, remove the seeds, and cut it into bite-sized cubes. Soak the papaya in diluted salt water for about 15 minutes to clean off the latex.

    Chop the coriander and remove the roots.

    Put a pot on the stove, add 200ml of water, then add the pig trotter, cover the lid, and cook until the water boils.

    Occasionally use a ladle to skim off the foam to make the broth clearer!

    After the water boils, add 1/2 teaspoon of sugar, 1 teaspoon of fish sauce, and stir well, then continue to simmer for 20 minutes over low heat until the trotter is tender.

    Once the trotter is tender, add the green papaya and continue to simmer for another 15 minutes until the papaya is soft, then add chopped cilantro and turn off the heat to finish.

    Note: Do not simmer the papaya for too long as it will make it mushy and unappetizing.

You can use either fresh or dried shiitake mushrooms!

For dried shiitake mushrooms

Choose those that are firm, not broken, bright in color, and have no white mold spots. It’s best to buy from reputable sources to ensure safety.

For fresh shiitake mushrooms

  • Choose those that are brightly colored, have a characteristic fragrant smell, with moderate-sized caps, tightly curled, and slightly yellow-brown in color.
  • Select mushrooms with firm stems, uniform color, and if the mushrooms are opened, the gills should be evenly spaced, beautiful, and dry.
  • Avoid mushrooms that are bruised, have a spoiled smell, or are slimy. If you see mushrooms that are dark brown, it is best not to buy them, as they may be toxic.

How to choose good, fragrant lotus seeds

  • You should buy lotus seeds that still have their shells and peel them yourself. This method takes a bit of time but will give you fresh lotus seeds, providing more assurance when using.
  • When buying peeled fresh lotus seeds, look for those that are mature, plump, and have an exterior color of off-white or deep yellow. When cooked, these lotus seeds will emit a distinctive aroma. Particularly, these lotus seeds will not be tough and taste very delicious.

How to Cook Pork Knuckle Stewed with Lotus Seeds

  • Prepare the pork leg

    As for the lotus seeds, you can buy fresh or dried lotus seeds.

    • For fresh lotus seeds: Remove the shell and heart from the fresh lotus seeds, wash them thoroughly to avoid bitterness if any heart remains.
    • For dried lotus seeds from the supermarket: Soak them in water for about 2 hours to ensure they expand evenly and are not hard.

    Then boil the lotus seeds in water for about 20 minutes to soften them quickly, saving time when cooking. After that, remove the lotus seeds into a bowl.

    • Soak shiitake mushrooms in water for at least 8 hours or overnight for even expansion.
    • After soaking, rinse the mushrooms under running water several times to completely remove sand and dirt.
    • It is advisable to cut off the stems of the mushrooms as they are quite tough and not pleasant to eat.
    • When soaking, add a little salt to help easily remove dirt and debris, while ensuring the mushroom stems are submerged in water.

    Place a pot on the stove, add 1 liter of water and the prepared pork knuckle, simmer the knuckle for 30 minutes until tender and releases sweet broth.

    After 30 minutes, add 1 teaspoon of salt and 1 teaspoon of seasoning and stir well, then continue to add carrots and cook until they are soft.

    Next, add the shiitake mushrooms and lotus seeds, then season with 2 teaspoons of seasoning, 1 teaspoon of salt, 1/2 tablespoon of fish sauce, 1 tablespoon of sugar, and stir well to dissolve the seasonings.

    Add the chopped scallions and stir well before turning off the heat to finish.

    Note

    • Regularly skim off the foam to keep the broth clear.
    • You can use chopsticks to poke into the pork knuckle; if it goes through easily, the knuckle is tender.
