You can buy minced beef or purchase whole cuts of beef to mince or grind at home using a meat grinder!

  • It is advisable to buy beef from reputable places, knowing the source to ensure the quality of the meat.
  • Choose meat that is bright red, not dark red, and the beef fat should be light yellow.
  • It is better to select small and tender pieces of meat, with fine grain, and when pressed, they should have good elasticity.
  • Avoid beef that is dark red turning black or pale green, has a foul smell and is slimy, and lacks elasticity; this could be meat from sick cattle or slaughtered a long time ago.

How to prepare Baked Stuffed Potatoes with Ground Beef

  • Prepare and Bake the Potatoes

    Wash the potatoes thoroughly with water, using your hands to gently scrub around the tuber to remove dirt and dust.

    Cut the potatoes in half lengthwise, then place them on a baking tray lined with parchment paper, sprinkling a little salt on the potato flesh. Use 4 tablespoons of olive oil in a bowl and brush the oil evenly around the potato, then sprinkle a little more salt on the potato skin.

    Put the potatoes in the oven, set the temperature to 180 degrees Celsius, and bake for 45 minutes.

    Tip: Before baking the potatoes, you should set the temperature to 200 degrees Celsius and preheat the oven for 10 minutes to stabilize the heat.

    Finally, wait for the potatoes to cool slightly, then use a spoon to scoop out the potato flesh, creating a small hole in the center of the potato (leave the bottom intact).

    Next, add the minced beef and stir-fry over medium heat for about 10 minutes until the beef is cooked, then add: 2 tablespoons of tomato sauce, 1 tablespoon of soy sauce, 1 teaspoon of dill powder, a little salt, a little pepper, 120ml of water, then stir well and continue to stir-fry for about 10 minutes over medium heat until the meat sauce thickens.

    Finally, add the scooped-out potato flesh from step 1, mash it well, and stir to combine the potato with the meat sauce, then turn off the heat.

    To eliminate the odor from the chicken, soak it in a diluted saltwater solution mixed with a little white wine for about 10 minutes, then rinse thoroughly with water. Proceed to cut the chicken into small cubes.

    • You can also rub it with salt or use a mixture of wine and sliced ginger, crushing it while rubbing and pressing all over the chicken to help eliminate the odor and dirt. Rinse well and let it dry.

    After baking, cut the potatoes in half lengthwise, using a spoon to scoop out the flesh and put it in a separate bowl.

    Leave a rim and the bottom of the potato about half a finger width to create a cavity for stuffing (as shown).

    The scooped potato flesh should be mashed and mixed evenly with the filling mixture sautéed in step 3 along with a little nutmeg (optional) and chopped cilantro.

    Use a spoon to scoop the filling into the potato halves with the cavity, sprinkle shredded cheese on top. Then place them on a baking tray lined with parchment paper and bake at 250 degrees Celsius for about 10 – 15 minutes.

    Finally, sprinkle some finely chopped green onions on top to finish.

    Tip: You can adjust the amount of cheese, cilantro, green onions, and nutmeg according to your preference!
